From the Pampas of Argentina and the Tulip fields of Holland, via the Caribbean, Florida, New Hampshire and Nevada, Chefs/owners Jose Luis and Catherine Pawelek have made Playa del Carmen their home.
Meeting on a cruise ship in 1980 was only the beginning of their adventures together and being called «The Nomads, Gypsies or Vagabonds» is truly appropriate for this global couple.
Salt Rock Grille + Cocktails and its menu is the fruitation of all their travels, with a motto of «Globally Inspired… Locally Produced», the Paweleks are making an impact on the local restaurant scene. Although they have opened, managed and sold 6 other restaurants throughout the U.S. this, their new restaurant on famous Quinta Avenida, has their full attention. Although laid-back Playa is a vacation destination, the restaurant caters to both tourists and frequent local diners. Personal hands-on service from the on-premise owners, paired with quality food and value driven prices is their goal.

The Paweleks have been working in Hospitality for over 35 years. Hotels, restaurants, cruise ships are their backgrounds, in every capacity imaginable.
Catherine started her experience with KLM Airlines in the Netherlands, followed by Western and Air Florida, segui into Carnival Cruise Lines where she met her husband. Jose Luis worked in hotels in Marbella, Spain, the Fountainebleau Hilton in Miami Beach and Carnival. They opened their first business, a Travel Agency and School in Coral Gables, Florida but felt that the restaurant industry was their future and opened their first restaurant Botticelli Trattoria in Kendall. Swiftly followed by 2 more (Coral Gables, and S. Miami). They sold the restaurants, purchased a country inn in the White Mountains of New Hampshire, operating it for 6 years, before the pull of warmer weather drew them to St. Petersburg, Florida. A subsequent move to Las Vegas, completed their U.S. circle. Jose Luis works as chef, while Catherine runs front of house
