God I hate to write this. This was delicious food. The owner was incredibly nice. That being said, I got sicker than a new sailer on a crab boat. I’ve not thrown up so much or so hard in my life. She had mentioned looking for help as it was slammed, so maybe they are playing it fast and loose with the food prep caution. When I left I wanted to go back quick, a few hours later and I think I’m done with shrimp as a food.

Love the concept! Choose your ceviche ingredients, makes a meal you can’t blame someone else for! It was good I had mine with cilantro, jalapeño, avocado, jicama and cucumber — with side of habanero and it was fantastic. The tortilla chips were the crowning. I only wish the place was more of a restaurant vs carry out feel(sure hope they grow enough to expand) It sucked I came in off season because fresh ceviche is not available so the fully«cooked» one is the main option. Really wish I had one close to home!

The best and cheapest ceviche i have ever had! Love love love the concept of creating your own ceviche. You pick whether shrimp or tuna or both to go into your ceviche, then all kind of toppings and sauces. They make it right in front of you. Everything is fresh and delicious! Beware of the spicy choices tho. They don’t skimp out on anything. You’d get a whole pepper whether u choose jalapeño or habanero. Make sure you can handle the heat ;) The store(i don’t think it’s even qualified as a restaurant) is very small, with just 2 – 3 tables and a few chairs. They only stay open until 6pm off season, but on any busy day, they could run out of everything by 3−4pm, so come early! I chatted up with Carlos for a bit since there was no other customer when i came in. According to him, they have opened for only 10 months, definitely cater to the locals, that explains the low prices. They are the first and probably the only one that run with the concept of creating your own ceviche. They are thinking about opening more locations and expanding up North. Please, please, please come to DFW!!! We would love to have you guys here!

Finally, and absolutely perfect rating overall for this restaurant truly means it, from the rest of the Unilocal community. Ceviche here are super fresh, and they mean it. I ordered the Fiesta with mahi mahi, and in that crazy mix, there’s fresh onions, grapes, jalapeño, limes, and other amazing goodness to create magic in your taste buds. I topped it off with sweet lime sauce, and decided that the tortilla chips where needed too. Even those chips were amazing! If I were to stop here again before my trip was over, I’d order it the same thing but with shrimp. One of the downfalls of this place was that their fresh produce, mainly the ahi tuna and shrimp, ran out in a few hours. Like they opened at 11 and totally ran out of all orders by 130. So on that note, I’d go in pretty early for lunch, and order the shrimp Fiesta plate. Happy eating!

Ceviche in a create your own fashion is genius! The possible are endless… depending upon what is still in stock when you arrive. This is actually the freshest ceviche I have had to date. 5 stars for the ceviche! Minus a star for being unable to keep up with demand for their fantastic ceviche. We had only one option by the time we arrived at 2:30, and I think they sold out around noon that day. Small store, 2 tables so it is more of a take it to go spot.

A pick-your-own mix in ceviche place? Where have you been all my life? When you walk in, it smells like fresh lime and cilantro. It’s tiny so either expect to wait in line or snag one of the three tables as you wait. There were only two employees working — apparently other employees didn’t show — but we hit it just right and only waited about 20 mins. Here’s the process: 1. Pick your protein — perfectly«cooked» shrimp, mahi mahi or ahi tuna. The tuna option is more asian in nature, tossed with sesame oil and soy sauce. 2. Pick a pre-determined style or decide what you’d like. Available toppings include all kinds of fruit and veggies. Pineapple, strawberries, mango, jicama, green onions, olives, tomatoes, cilantro, onions, cantaloupe, avocado are among the options. 3. They put it all on a cutting board and then chop and mix it up in front of you. You get a choice of crackers or chips and if you ask for it, a complimentary beer. If I had to give them some advice,(other than get a bigger spot) it would be: – Find some reliable employees. You’re only going to get more popular – Set some expectations around wait with a sign or something. – Consider charging more. Yep. $ 2 — $ 3 more is still totally reasonable – Set up a special«to go» section and dedicate someone to putting those orders together instead of trying to do it while helping regular customers. It’s a fantastic idea and I hope they can make it work and be profitable. Definitely consider doing a second location in Austin.
