Eating this day was about survival. I had a 14 month old and a wife that can redefine«hangry». We had a cross country flight to catch to DC with a running layover in Denver. I strapped on my dad gear(baby bjorn) and prepared to face the day. We stopped at Hash It Out with no clear understanding of what awaited us. A breakfast burrito that was complex, each bite offering a new perspective on eggs, cheese, potatoes, and bacon. I remember that taste 6 months later… Bacon that wasn’t propped up with additives. It probably came from a very happy pig. My wife and daughter shared the standard. The baby, who was on solids since 7 months, wolfed down an incredible amount of food. For my wife and I this was our last meal of the day, and it was more than enough. We were able to triumph through a lost bag and running the entire Denver airport. This food cart did Portland proud and will be my first stop for bfast when we return.

bowls or wraps, this place makes good scratch food. The vegan sausage was also seasoned really well so it taste like real meat flavor. Definitely a great place to check out amongst 6 – 8 other food trucks nearby including a great coffee cart.

I love that this place uses organic and local ingredients. Got the standard and it was sooooo yummy and comforting, especially on a rainy Sunday. The bacon here was perfect and the cart also had a nice array of condiments. The guy at the cart was also super nice.

Got the Nest with pork shoulder, which was a perfect way to warm up on rainy day. The pork was unbelievable and the kale was was cooked perfectly with a little lemony kick. I left full, happy, and ready welcome the return of our beloved Portland’s wet winter weather. Thanks, Seth!

In short: surprisingly boring flavors. Expensive. Long wait. In long: To be fair these guys took over the old Big Egg cart so they have some massive shoes to fill. Unfortunately, they don’t seem to have the slightest idea what it takes to run a successful food cart or even make a successful breakfast burrito. Our first hint for what to expect was all the half eaten breakfast bowls left in the dirty dishes bin. We got one wrap with cheddar one with Swiss. We never did figure out which was which because you couldn’t see or taste the cheese at all anyway so I suppose it didn’t matter. The potatoes were a little under done, significantly under salted and you couldn’t really taste the difference between the eggs, tortilla and potatoes. It was super dry with no sauce or salsa in it. By far the best tasting thing was the field roast sausages but I can buy those at the store and not spend $ 9 plus tip. As other people have mention, the cart doesn’t seem to have any concept of expediting orders and only takes one at a time. We were the only ones in line and he told us it would take 12 minutes. More people came and stood in line to order but he wouldn’t take their order till he was done cooking our meal. This cart has a really long way to go but they are friendly so that’s a start, I guess.

Had their breakfast burrito(a long time ago with a 20 minute wait). It was great, which brought me back today(so I hoped). There are problems with this food cart. The operators don’t understand the concept of multitasking — only one order taken at a time? They lack the chef’s confidence. You’re a breakfast food cart — why would you run out of an integral part of your menu just two hours into the shift and then say ‘I think I have only one order of potatoes left, so that will have to be the last order’. If you don’t know how to run a food cart/restaurant/whatever, why bother? I’m not saying this because I think it’s easy. It’s precisely because it’s not easy at all and that the operators of this cart seem to think anyone can do it.

We got the wrap and it was delicious. I got the chèvre with pork shoulder and the boyfriend got the aged cheddar and bacon. Creature of habit. Both delicious in their own right! Would definitely recommend this place! Very hipster! Absolutely a must!

I love the idea of this place. It’s the perfect bowl of breakfast. The problem is the food needs some work. My potatoes weren’t cooked all the way and there was way to much salt. I will definitely give it another try, I really want to love this place.

I like the angle of local and organic. I like the concept, one bowl sort of thing, but the execution is just a little off. I got the standard. The price is a little steep, even if they are organic and local. Breakfast constitutes the highest markup in the food industry, but this is a little outrageous. The cheddar flavor gets a little lost, but the main part that turned me off was a bitter element in the hash that was a little unpleasant. Actually it was a lot unpleasant. Eggs were cooked well though and very friendly service. If someone was going to treat me I might go back, but otherwise there’s plenty of other carts out there. Sorry.

Go with the corned beef hash. We met Amy, who was working the truck on her own this AM. So friendly! Thanks Amy. Great food truck atmosphere. Plenty of outdoor seating and there are bathrooms.

delicious. i will forever miss the big egg in this location but this is a wonderful followup act. a little pricey with bacon/meat added, but it’s all local organic and they actually provide dishes for eating there so a great deal less waste than all the other carts.

Really tasty breakfast on June 30. Got«The Standard,» which is a spicy little number, that is enough for two(if you aren’t starving). It’s basically a hash with potatoes, peppers, eggs, jalapenos and onions. Yum! Get it with the pork shoulder and cheddar… thank me later. No need for hot sauce. They just opened about a week ago, so they don’t have drinks just yet, but there’s a little coffee cart nearby. Enjoy!
