Ésta es sin duda una de las mejores carnicerías que puedes encontrar en el anillo oeste de Ámsterdam. Tuvimos la suerte de estar alojados muy cerca y poder saborear su embutido, que es de una exquisita calidad, sazonado y salpimentado con multitud de especias; es de obligatorio cumplimiento llevarte al menos un pequeño bocadillo de cualquiera de ellos porque es muy probable que no hayas probado algo similar en la vida. También vende una gran variedad de quesos que amablemente nos dieron a probar(me dieron ganas de llevarme un poco de cada variedad pero me tendría que haber traído otra maleta sólo para eso). El personal es atentísimo, agradable, educado, y muy comprensivo con los extranjeros que nos intentamos defender con el idioma. Nunca está ocioso, siempre cortando y preparando carne. A ciertas horas se llena tanto que puedes esperar muy bien unos veinte minutos hasta que te pueden atender. Además, la carnicería está muy limpia y bien acondicionada, sin olores extraños. Por poner un pero, y es francamente difícil, simplemente decir que todo lo bueno y de calidad se tiene que pagar, así que no es precisamente un establecimiento barato. Pero merece la pena la mera degustación de esos embutidos(seguro que repites, como nos pasó una y otra vez a lo largo de nuestra estancia).

Best Butcher in town, they have a variety of fresh and processed meats. The prices are listed on a board or using old fashion plastic signs. They have a variety of liver paste and they sell other peculiar items. I tried two types of salamis here, both had a unique and delicious smoked taste. One of the favorites here in the Netherlands is a salami that is slowly cooked by smoke at a specific temperature for one year or so. It has a raw appearance, however the meat is fully cooked by smoke and the process they are using. All sausages or salami are served with mustard the condiment of choice in the Netherlands.

When you enter the shop all this meat and meat products is smack dab in front of you. The glass display case containing most of the meat sits at an angle across the room so that when you enter you’re looking straight at the meat. Behind the counter the butchers and their helpers are busily cutting or wrapping meat. It’s definitely a busy store. As is usual for me, I stand in line awaiting my turn to come up when 15 minutes or so later I realize it’s a numbered system and I have to get a number. LOL. Of course the ticket number dispenser is right at the door as soon as you come in. Doh. The staff is friendly and helpful and can even decipher my kind of okay spoken Dutch. I suppose they’re happy I’m at least trying. Actually it’s so good that they respond in Dutch leaving me wide eyed and confused not knowing what it is they said. The prices are okay, not low not high. The meat fresh and ample. After much research I’ve determined the difference in cuts of meat here in Holland. The beef is leaner and has less marbling. It makes me wonder if marbled meat is available here in Holland. Regardless, it’s a nice clean friendly establishment that I’ll return to many times to buy my cuts of meat especially since now I know where they’re located.

Let me just start by saying this is the cleanest and best butcher shop I have ever been to, and I come from a family that owns a cattle operation in Eastern Oregon and Northern California and a steak house in San Francisco. Louman is also the only butcher in Northern Europe that has to date cut a proper Tri-tip. Every Thursday morning they receive cow shipments and every Thursday I pick up a beautiful 2.8 kilo average tri-tip specially cut for me. These ladies and gentlemen at Louman are professionals, educated, hygienic and incredibly nice. From what I understand, they will be offering a Santa Maria marinade tri-tip for sale on Saturday’s only. I highly recommend to order in advance.
