Cute, airy and friendly, a nice option in Pioneer Square. I am a huge fan of the Coyle’s Bakeshop pastries and they sell them here! Love.

Food Trucks are becoming more and more abundant these days, but owners Alex and David went all Seattle on us and decided to go human powered with a mobile coffee stand on a bicycle instead! The bicycle pulls two carts that contain a propane setup for a stovetop to heat water and electricity to be able to grind beans. It’s a pretty impressive setup to be pulling around on a bike to say the least! They serve their coffee multiple ways — manual brewing, French press, cold brew, and my new favorite the Aeropress. The Aeropress was a completely new concept to me. Imagine a French press in the form of a giant syringe with a filter at the bottom. Load the grounds and the hot water and press the water through the syringe like opening into the cup. It’s quicker than a French press and provides much of the same effect with less bitterness allowing you to really get the full flavor of the bean. You can find these guys on street corners, at farmer’s markets, pop-ups like Coyle’s Bakeshop, festivals, and what have you so be sure to check their Facebook or Twitter to get a rundown of their actual calendar. Overall it’s a very cool concept with friendly owners and I love supporting entrepreneurs.
