I’ve always wanted to try the Verde truck — it’s eye catching so I imagined the food would be outstanding, or at least palatable. I ordered a burrito bowl with carne asada. It came in a 3×5 red checkered cheap cafeteria type cardboard container, and was unrecognizable as a burrito bowl. The dish was covered with cheap shredded cheese that looked and tasted like the lowest quality shredded cheese that you can find packaged at the grocery store. The lettuce was wilted and slimy. I was starving so I tried to eat it but couldn’t actually look at it and had to take some extreme measures to keep both the slimy lettuce and cheap packaged cheese from touching my mouth. The 5 or so pieces of carne asada were favorable but seriously — I payed $ 10 for five small chunks of carne asada in a cardboard bowl of slime? Definitely not a good experience!

Let me say I want to give the truck 5 stars. The food is amazing. I booked the food truck for my wedding. The guests loved it and we eat at Verde at least once a week. The burritos are delicious. The seasonings are on point and the portions are huge.

So how many wedding have you been to that two hours into the celebration you find yourself hungry? I know my answer is every wedding I have ever been to, until TODAY! They showed up and provided a very simple menu that was meant for the wedding. Chicken, Beef, Pork, and Veggie tacos that hit the spot and was great! Having eaten Mexican from many food trucks in many places I can easily say that Verde is at the top and number 1 in Boulder! This truck would do well in San Diego on any day. I can only hope to find them again while visiting Boulder! Just writing this is making me hungry!

As a California native, I am SOOOOO offended by Verde’s $ 10 «California» Burrito. It was inedible and after one bite, I ended up throwing it away. It was filled with huge chunks of chewy beef and I think the«salsa» that was in it was some sort of green chile? Super yuck. And where’s the french fries?! That what makes a Cali burrito!

It was the eve of my 34th birthday. I finally felt like I had achieved that«certain something» I had been sacrificing everything for. No job, broke, living in my parents basement — I proved all the naysayers wrong. I was called upon to be the Game Master of our local live action role playing chapter in Boulder. After reenacting an epic battle(let’s just say I put Gandalf to shame ;-) my boy«big Nate» and I were reminiscing about everything we have accomplished and the road to get there. Starving and mentally exhausted from LARP(Live Action Role Playing), I waited for mom to pick me up in the park. But wait, I spotted a Burrito truck. It was at that point something changed. After eating what seemingly tasted like the PERFECTBURRITO I was over taken with passion. I began eating burritos daily all day from every where. Blogging listening to podcasts posting on social networks to find that perfect burrito. Was it true? YES!!! I love Verde food truck!

When I think of mexican food especially in a food truck I think carne asada burrito packed with meat, guacamole, and salsa. I ordered the carne asada burrito and it had rice, beans, some meat. It tastes like a bigger version of a burrito you can get at Taco Bell overpriced. If your looking for the street kind of tacos with true mexican flavor I would not recommend this place. If you’re looking to get a Taco Bell fix and the food truck is closer than the nearest Taco Bell then by all means this is the food truck for you. I come from San Diego — home of the california burritos and carne asada fries and chips — this was not the type of mexican food I was hoping for. I was very disappointed.

I read the reviews and figured would invite my family to try a new place; it was good but not everything others make it out to be. I liked their stake as it was juicy and the size of burrito was OK for the price, staff and believe owner were attentive but I’d suggest adding some salsa or something more to burrito. I had the California burrito. I was not looking or expecting authentic but flavorful and delicious which fell short of what I imagined from reading the reviews. I would have to say the worst part of the whole experience was on way out the stare of boulderites whom apparently have either not seen or not too fond of ethnic people.

I was really hoping to like the food here… I mean at first sight, a cool lime-green food truck boasting authentic Mexican food, it has to be good right? They had a simple menu with burritos, tacos, and quesadillas so you would think they must have it down to the science. Three things that disappointed me are the food was overpriced, the prices on their menu page online isn’t the same as the menu posted on the truck, and the burritos reminded very much of the microwaveable burritos you can get at 7-eleven except Verdes has whole beans vice refried beans that are typical the in microwaveable kind… and at $ 9 for a «California» burrito… I could of gotten at least 5 burritos at a vending machine and it would taste closely the same. I used to live in San Diego where there were hundreds of Mexican joints to choose from… bottom line is my least desired Mexican place to eat in San Diego is still better than Verde. I gave it two stars because I was very hungry when I went there and it did fill me up.

Trendy, friendly and tasty — what more could you ask for?! The menu is not extensive, but what’s on it is quite yummy. I especially liked the Mexican street corn! Serving everything on colorful Fiestaware gave the meal a festive flare that I appreciated as well.

The chile relleno? Unedible, I threw out. The chicken nachos are okay but they use a LOT of onions and peppers. It’s definitely overpriced. The guac was brownish too.

I went Friday at happy hour at sat at the bar. I ordered a happy Margarita w/salt on the rocks and it was tasty for $ 5 a good deal. Then I ordered some nachos, which were also very tasty. I opted to try the $ 5 pitcher of good local craft beer. I would go back again to try some more food. Love that it is close by.

I’m from Tucson AZ and was visiting Boulder last week. Decided to try Verde, and it was the best Mexican food I’ve had in Colorado. The tortillas were freshly made on premises, and that enhanced everything. Our party tried the cheese crisp and Sonoran hot dog sliders for starters; I had a chimichanga for my entrée and followed with churros for dessert. The churros weren’t on the menu, but my server suggested them. The came with two sauces and were excellent. In fact, all the food was excellent — on a par, if not better than, the food I’m used to in Tucson. Good work Verde!

I had high hopes for the B&M version of one of my favorite food trucks. I’ve eaten there twice and have, so far, been disappointed. Our lunch visit included Guacamole & Chips, Shrimp Ceviche and their Crispy Mexi-pizza thing. It’s kind of like an open face quesadilla. First, the chips. I didn’t like them because they reminded me all too much of deep fried flour tortillas. Crumbly and bland. I thought they were flour but the staff there told me they were 100% flour. Maybe they were but they sure weren’t made from masa. Guac was okay… too much lemon though. Ceviche was bland the the chunks were too big to stay on the chips. Dice that stuff up a bit more kids! The crispy Mexi-pizza thing was the best thing with freshly grilled veggies and shredded chicken. The chx was really good but the chef needs to spice the veggies while they’re being grilled. The salsa were good but I would mind if they had one that was a bit hotter. Everyone was super nice and the service was good. Dinner was a bit more chaotic. I’ll give them the benefit of the doubt of a new operation and not mark them down yet on their service but they do need to step it up a bit. My friend ordered tacos. $ 4.00, yikes! That’s alot for a street taco. Sure, they were loaded but that just made them hard to pick up and eat. Again, all the meats except the chx was pretty bland. I ordered the asada fajitas with high hopes. They came out on a beautiful sizzling plate. THe veggie were plentiful and expertly grilled to the perfect«al dente» that I love and there was tons of asada that was perfectly cooked. But, and that’s a big but, the whole plate was flavorless. It’s like they’d never heard of salt. Or pepper. Or chipotle. WTF? There wasn’t even any salt on the table. I took most of it home and sauteed it up the next day with some spices. Much better. The tortilla they supplied was a huge flour tort and was folded up in quarters. It was okay when I tore pieces off and folded it around the filling. It reminded me of the giant bread you get at an Ethiopean restaurant. Oh…the margaritas were terrible. Buy a beer instead. I love the ambiance but these guys need to step it up on the food. I give them a hopeful 3 stars.

Last night was the first night open of the new brick and mortar restaurant on 28th. Had the chicken tacos, mexican street corn and the hot dog sliders. All were great. The pulled chicken was flavored well and I always appreciate house-made corn tortillas! The mexican street corn was delicious and this place does not water down the spice level in the food which wins me right over! Good job Verde!

The spicy carnitas tacos are actually spicy. Major bonus points there… nothing worse than false advertising. I thought the tacos were good… they are gringo tacos with cheese and lettuce on top. Nothing wrong with that but not my top option. We had the cheese quesadillas and I was a little disappointed because I felt like the tortillas were severely dried out. It’s such an important element of the dish that you can’t afford to mess it up. Overall, it’s a good option if you’re out drinking and need something to eat but otherwise I wouldn’t go out of my to seek out this truck.

Love their bean and cheese burritos. Pretty basic but good enough to soothe my inner burrito addict. Their hottest salsa isn’t very spicy but melds well with the smokey beans. Their guacamole is $ 2 but absolutely worth it. I wouldn’t go out of my way to track down their truck but I’ll happily nom their face-sized burritos whenever I have the good fortune of running into them.

My buddy and I have been searching Boulder and Longmont for the best Tacos Current Ranking: #2 out of 9 Food: What a great taco truck! I had the carne asada tacos and they were just amazing and full of flavor! I need to go back a try everything else they have, everything I saw coming out of the truck just looked amazing! Service: Very quick! and they even accept credit cards which is nice to find with a taco truck. Check them out on facebook or twitter to find their daily locations. Food Tried: — Bean and Cheese Taco($ 2.50) — Chicken Taco($ 2.50) — Beans and Rice($ 3) — Mexican Coke($ 1.50) If you can believe it, at this point in the game, my family is still skeptical about the whole food truck thing. They understand that I love them, that I’ve put a lot of work into both enjoying the food the trucks provide and doing my best to give back by reviewing them, but they still have never tried a truck, and are wary of the whole idea. Luckily, the trucks in the Denver/Boulder area, where my family lives, offer a wide variety of options, and many offer gluten free choices, if not a entire gluten free menu!(Three members of my family don’t eat gluten.) To begin the process of full assimilation, I took my youngest brother with me for a food truck adventure; it began with Verde. When doing my research, Verde caught my eye because of the insanely catchy music they have on their website. Normally I can’t stand a website that invades my personal listening space(usually occupied by the most amazing Pandora station ever). Nonetheless, every time I visited the Verde website, I found myself dancing along, and I knew that meant a special alliance had been formed between my subconscious appetite and Verde. How right I was. Verde boasts«Authentic Sonoran Style Mexican Food», and while I’ve never been to Sonora, I have had my fair share of Mexican/fusion food truck fare(see also: Nacho Mama’s, Tacos Without Borders, see also West Coast Tacos; all Indianapolis, IN). I can say that I am confident this is authentic Mexican food, like good as any I am lucky to find along the Rocky Mountains, and certainly excellent calibre for the food truck options(though there are a few other trucks on my radar). My brother’s made-to-order bean and cheese taco was great, perfect for kids because a burrito would be just too big! My chicken was juicy and seasoned beautifully, and the salsa on top was the perfect amount of pow! and yum! Verde’s tacos are served on corn tortillas, making them gluten free(though the quesadillas and burritos are not). Food comes off the truck fast at Verde, which is good because they seem to cater to a office-lunch population that needs food fast and tasty. The serving size of their beans and rice was a meal in itself, easily shared among 3 – 4 people. For $ 10, I got a meal for two, with a drink. Brush that dirt off your shoulders, Verde, because that’s a damn fine meal for the price. All in all, Verde hits every nail exactly as it should be done: great food, reasonable prices, fast service, lots of options, and a friendly, fun atmosphere. Not that I’ve seen many trucks do things wrong, but Verde stands out in my mind for having virtually nothing that stands out in a negative way. I would perhaps appeal for the beans and rice(and possibly other side dishes) to have take away containers with lids, because the portions are so big that you’ll need to be able to take them back into the office(or in the car to the Wings Over the Rockies museum). Other than that, I tip my hat to Verde.

Another great mobile food truck in the Boulder area. Loves it! The Verde truck is more of a traditional food truck, with the recessed side/vending area. Its loaded with snacks, chips, canned drinks for purchase as well as Mexican food made fresh to order.(Tasty too!) Their prices are great and def the most affordable of all the food trucks I’ve come across in Boulder. I also love that they usually stay parked in one area for 4+ hours, so you don’t miss them.
