Eine Empfehlung einer Kollegin unseres Sohnes, der in Amsterdam lebt. Eine gute Empfehlung. Spanisch/Chilenische Küche, sehr gute Wein-Auswahl und äusserst kompetentes und freundliches Personal. Die Qualität der Speisen und die originellen Arten der Zubereitung sind aussergewöhlich.

Came into Singel as a backup. So glad I did! After a hectic tram hopping pavement pounding day, relaxed, drawn out, attentive care of Singel was spot on. Soothed by the Jazz standards and small space, I had a highlight meal for Amsterdam. Raluka(?) explained the very solid, limited menu and then offered Chef’s menu. Trust the Chef when in doubt. The amuse bouche of lentils, radish, microgreens and artichoke with a sherry vinegar was balanced, nicely astringent and tasty. The first course was very good. Mackerel sashimi with enoki mushrooms and corn prepared severally: popcorn, diced kernel, and a corn«pillow pastry» with sweet corn cream filling, all complemented with a light champagne cream. Acidic, sweet, complex. Paired with a Tokaji/Furmint wine: pear, lime, dry akin to a nice Vouvray. Course 2 was just as strong. Veal cheeks with beets, cauliflower, haricot vert and a rosemary foam. Tender, juicy, earthy and sweet. Full flavor. Well-paired with a 2011 Escudo Rojo, Maipo Valley, BPR that was improved by the fatty veal cheek. Finished off with a memorable trio of strawberries with the champagne cream. Excellent desert. I left completely satisfied and quite pleased. Very recommended!

Great food, great environment. Try the pheasant and the ginger carrot soup. Nice Chilean wines. Very tasty dishes in a stylish relaxed environment.

OMG! I live 5 minutes from this place and did not try it out for years… My bad! I’m catching up though, been there 3 times in 2 weeks now :) The food is delicious, SUPER skilled & friendly staff. On top of all that: a 3 course menu including bread/olive oil and amuse for € 35. Don’t wait: go now and enjoy the deliciousnesssss!

Had a frisée salad with Gruyère and pine nuts that was great, and then a Churasco(?) sandwich: roast beef, avocados, veggies, on a dark brown role. Both were extremely tasty. Service was not bad by European standards. They have tables on the sidewalk so that you can watch the Amsterdamers racing furiously down Singel on their bicycles. Right on the canal for a nice view. Good neighborhood. I can only speculate that their dinners are quite good. Décor inside was classy.
