We installed a pizza oven in our home and then invited 25 of our closest friends to dinner. Mid-week before the party we started to panic! We had never used the oven and had not been successful in even making pizza dough! We found Mike from Rolling Fire Pizza and he was able to come to our home and give us a private lesson. Mike is a patient and skilled instructor, amazing chef and a exuberant coach. Because of Mike(Rolling FIre Pizza) our party was a success! If you are looking for a lesson or a catered event we would not hesitate to recommend Mike at Rolling Fire Pizza.

Rolling Fire catered my son and daughter in laws wedding reception on an extremely stormy day in September. The conditions could not have been worse for having to cook pizza outside! I must say, Mike Dash the owner, and his staff were professional and extremely accommodating even during these extreme weather conditions. Oh, let me get to the pizza… It is INCREDIBLE! The crust is thin and cooked to perfection. The pizza toppings were amazing! Pistachios on pizza? YES!!! Everything they made was so good it was scooped off of the table the minute it came out of the oven. As if that were not enough, Mike came in to ask me when to start the dessert pizzas! Chocolate pizza? Apple and Gorgonzola pizza? These were equally amazing. Later when packing up after a wonderful, memorable night, I saw the heart shaped chocolate dessert pizza that Mike and his staff made for the newlyweds! I would happily add a sixth star if I could to this review! Do not pass this place up. Thank you, Rolling Fire!

The pizza is absolute crazy wonderful. Pizzagasm to say the least. They are only there once a week and get it by the slice or a whole pie. Nah, a slice was not going to do some I bought a whole pie to feast on. All natural, organic, local grown toppings such as heirloom tomatoes, carmelized onions, peppers, basil, ect. The crust is whole wheat, that is the star of the show. Sauce you can choose between red or just plain olive oil. They are amazing. Oh and the staff is just wonderful, they are so friendly. But get there early because they close at 2p Sat only and or when they run out.

Mike Dash studied with the best, both in Seattle(Veraci) and Naples. When not making pizza he’s designing ovens or teaching pizza. His knowledge is just the right balance of hands-on and book learnin’. Mike knows the difference between a a topping and a garnish. In a Margherita basil is supposed to be a garnish(added after the pizza comes out of the oven so as to not blacken it). Not everyone understands this distinction. He provides a benchmark for pizza on the West Coast.

Mike Dash, the owner of Rolling Fire, makes unbelievably good pizzas and flatbreads. Every Saturday morning he sets up at the University District Famer’s Market — between the farmers and the school. You can smell the wood burning oven as you walk through the market. These pizzas compare to the very best pizzas I’ve had in Italy — small, thin crust, and lightly dressed. The flavors are intense and the heat of the oven adds more intensity. When we ate there last Saturday, Mike invited us behind his work area to watch our flatbread cook — it just takes a couple of minutes. We bent down to watch how the flames spread across the roof of the oven. There are other wood-burning pizza ovens in Seattle — Tutta Bella, Via Tribunali, etc. — but these simple pizzas are better than anything else I’ve had locally. Don’t miss them. ========= Later note: Rolling Fire hasn’t been a regular at the U-District Farmer’s Market in 2011.

First let me say this has got to be my new favorite place to get pizza., and I am a pizza freak! It is part of the U-Districts Saturday Farmers Market so it is only available once a week. It’s a guy(Mike Dash) and his real wood fired oven that he has mounted to a trailer, seriously cool looking!(hopefully I will remember to bring my camera one of these weeks) The Margherita Pizza is so good I don’t have words to describe other than yummy yummy. There are a few chairs or you can sit in the grass or take it in a box. He only sells pizza so bring something to drink.
