Cute little family-friendly bakery with delicious sweet and savory treats. I finally stopped in here on my way home, having passed this place so many times! The pastries look amazing, and of course, I had to try the croissants first. I tried one filled and one plain croissant, with the help of my two year old. The flakiness on the outside was just right, and I was pleased that the filled croissant wasn’t bready or soggy on the inside(a common thing, I find, with many beautiful croissants.) They had cold brew, which made me very happy. The only thing I wasn’t so happy about was that they serve it on nitro over ice. The funny thing is that when I first had nitro cold brew, it was NEVER over ice anywhere I went, and I was sad because I was so used to ice in my cold brew. Now I’ve changed my preference! Next time, I’ll order it with no ice. It’s just good to know! I’ll stop by again when I have a structure-free morning. There are so many things to try, and I want to try them all!

The ham and Gruyère croissant was delicious! Buttery and flaky! Highly recommended. Coyle’s has that local neighborhood bakery charm. The only thing I worry about is that everything is so perfect it doesn’t feel kid-friendly(even though it is.) If you need a reason to visit, do it for the croissants and pastries.

Two things I’m alway in search of: sweet treats & cold brew coffee. This place is it! … And it’s super cute and laid back. A dozen or so pastries, cakes and nibbles in case when you first walk in. Cream puffs are filled to order(I’ll be trying those next time). What caught my eye most was the passionfruit tart with meringue on top. It did not disappoint! Since my honeymoon in the Dominican Republic two years ago, I have seeking out any and everything passionfruit! And the meringue was soooo good too! The passionfruit tart gets five stars all by its self! My friend got the rhubarb pastry that was also delicious! I don’t have much experience with rhubarb, but my friend gave the pastry a thumbs up! I had an 8oz cold brew, I think there were two or three sizes, but cold brew is so strong I can’t handle more than 8oz! They have a great cold brew, no bite, great flavor and didn’t need any milk or sweetener! They have several milk options as well, my friend had coconut milk added to hers! Not a huge amount of seating inside and there are a few two person tables outside perfect for a coffee date on a sunny Seattle day! The girls working were very nice and patiently waiting while my friend and I went back and forth about which pasties we were going to try. The décor is so cute(gold accents, sparkly chandelier, exposed beam ceilings and cute lighting). This is a great spot that I can’t wait to return to!

After several visits, I cannot deny how much I love Coyle’s. Its funny, I typically crave their pastries on Mondays… when they’re not open. Its probably a blessing in disguise since if they were open on Mondays I would be here every week! Anyways, my original favorite to order(when available) was their olive oil bundt cake. They usually switch up the fruit but my favorite so far has been with pear. I love the fruity notes of the cake but yet its not too sweet. My new favorite item I now love to get, after this morning’s visit, are their cream puffs. I stumbled upon some crackle-top coffee cream puffs, which are filled to order. The crackle-top had a nice caramelized texture and gave the puff a delightful crunch and the coffee cream filling was generous. This has got me dreaming of wanting a tower of these cream puffs if I ever have a wedding. You have to try some of these if they’re available! Other items I highly enjoy at Coyles are their seasonal fruit croissants, caramels and savory croissants. Based on what I have tried so far, it seems you really can’t go wrong with anything they make at Coyle’s. Now that the weather’s getting warmer, they do have outdoor seating. Coyle’s is also family friendly as well too.

Impeccable in every way. The ambience. The selection. But most of all, the croissants. I had the seasonal– rhubarb with a cream type filling, dotted with vanilla beans. Wow. The croissants are perfectly crispy on outside/soft inside. The cute marmalade cookie was good. Basically, I could have easily sampled the entire case with an endless calorie allotment. Best in class Seattle bakery.

I love this little place. Pastries are always divine. I love the seasonal croissants that they make. The ham and cheese is another must when I visit. Plus, seeing the employees making on the various pastries that they serve is extra special to me. Usually they have someone who is working on making the next batch. Come with a friend so you can get a couple options and share!

I love bake goods and i love bread but this place is mediocre. The famous chocolate croissants are good but I feel I can get the same for half the price and better vibes at Pike’s market. The décor is nice and is perfect for the area but if you want good service go elsewhere with less décor more taste and smiles

The scones here are buttery, flaky, and melt-in-your-mouth goodness. I don’t think it could have been any better except for maybe being a little bigger. Mine was gone way too fast. I also tried the croissant, which was flaky and good as well, but the scones… That would bring me back alone

While the pastries are good, they aren’t worth dealing with the staff. My girlfriend sweetly asked the OWNER about a scone. She snarkily told us that they were out, and as we were leaving, she actually laughed at us. That’s a thing? Way to embrace the community you rely on. And that type of thing has happened everytime we’ve gone in. Never again; We’d rather go to Starbucks.

These are the kind of places I hate to review. Just SO good, I don’t want anyone else to know because then I would have to wait in a longer line… I’m pretty selective when it comes to my vanilla lattes… They’re a treat, so they have to be the best or they’re not worth the splurge. Coyle’s has made the top 3 for acceptable places to get one(others: Café Besalu, Storyville). And the pastries… ooohhh the pastries. Amazingly delicious. We’ve had the pistachio, ham and cheese, the bacon scone, the seasonal croissant and seasonal scone… all dream worthy. I was quite pleasantly surprised at how awesome the scones were! The only thing I wasn’t too impressed with was the macaroon, but again, I am spoiled by Café Besalu and maybe too critical.(Or maybe I was just too full!?)

I am craving those cretzels and scones! Here I am in the heart of Silicon Valley, California and we have no cretzels and scones that are so light, buttery, flaky!!! If I didn’t have to watch my calories for the week, I’d be overdosing on their pastries. I will be back and since my sister lives in the neighborhood, I will have a reason to visit her(ok, I’ll still visit her regardless) ;)

Finally made it up here for breakfast this morning with my toddler son. My apples & cream seasonal croissant was perfection and my son’s plain croissant was a flake-tacular(which went EVERYWHERE — our apologies to the staff). This place is known for it’s baking, which is should be(super fab), but, I wanted to note that another thing that blew me away was actual steeped tea(aka, they WAIT for the tea to steep before adding things)!! Very rare in Seattle … and when I ordered steamed milk, it came in the cutest, fanciest side pitcher(see photo).

The croissant I had here, is probably the best I’ve ever had. Stop flying to Paris to eat decent baked goods. The cretzel is a fun novelty, but I wouldn’t order it again. The large fluffy sea salt flakes and the harder flaky crust is a fun play on a classic, but their normal croissant or one with a filling is really much better. Coyle’s is a welcome addition to Greenwood!

Greenwood neighborhood gem. I plan my walks to the library around the days they are open so that I can get my fix. I’m officially a cretzel addict. When they’re not available(they sell out quickly) I’ve ventured into trying their other options. Chocolate hazelnut croissant could be renamed heaven, wouldn’t be mad about it. If you’re into lattes, they make their own syrups, which are also awesome. I ventured away from my standard vanilla latte after trying my boyfriend’s mocha. So good! Also a big fan of their seasonal lemonade — they had lavender lemonade last time I was in. If you’ve never been, Coyle’s Bakeshop is worth a visit. Your tastebuds won’t be disappointed. It’s so much fun to watch the ladies working in the back, too!

Had to try the ‘cretzle’! It definitely had that crispy croissant taste. Also tried the lavender coconut macaroon. A little doughy but the flavor was delicious. Homemade berry jam was great. Didn’t care for the coffee though. A little sour. I’ll have to go back to try some other pastries. Cute décor inside

This is my second attempt coming here, the first was opening day and they sold out quickly. I came here for one thing and that was the cretzel and I finally got it. The cretzel is kind of amazing. It really is half pretzel and half croissant. It’s flakey on the inside like a croissant but outside its a little crustier and harder than a normal croissant and in the shape of a pretzel. I really don’t know how they do it but I think it’s from the salt on the outer layer that makes it taste and reminds you of a pretzel. Each bite tells a different story whether it’s a croissant or pretzel. I’ll definitely try the other pastries out next time I come by the bakeshop.

I definitely have an eating problem, because this morning, I ate a cretzel, a slice of Victoria sponge cake, and half a meringue for breakfast. I didn’t even share with anybody. I was pretty excited about the cretzel, but it wasn’t as unique and usual as I thought it would be. I don’t know if it’s «specially» made, but what it tasted like was croissant dough tightly rolled and then formed into a pretzel shape with some salt on top. As a result, you get a croissant that has a crispier bite. Not bad at all, but next time I’d prefer a regular croissant. The Victoria sponge cake was a fat slice. I got full off it, so now I feel a little guilty. The cake wasn’t fresh(saw it on the counter wrapped in plastic) but I wanted it anyway. It was a bit stale and dry but that obviously did not stop me from eating the whole thing. The cream and the berries was divine. So good. There’s also a layer of raspberry jam on the cake — yum! The cassis meringue was surprisingly good! I had been turned off by meringues ever since having too many of the Trader Joe’s variety as an adolescent. As a 6th grader, I had decided that I hated meringues. Today was the first time I had had a meringue since then — 14 years ago! These ones at Coyle’s were a whole different type of meringue and I ate half of that huge thing, so that tells you something. The other half is sitting on the kitchen counter waiting to be devoured later. Coyle’s probably won’t be my bakery of choice, but if you’re in the area, it is worth a visit.

Stopped by for the first time yesterday, it was a great excuse to grab a bite AND catch up with old friends who live a block away. This is definitely a cute place, very Seattle-trendy! I’ve been following all the local foodie hype surrounding Coyle’s bakeshop, but alas never made it in for her pop-ups. I feel this is a solid place, but there were a couple of things that made it less than perfect. The asparagus quiche’s filling was excellent– soft and creamy, but the crust was very difficult to cut. I think it was overbaked. Hubs loved his seasonal fruit croissant, which was rhubarb I believe. My mint tea was delicious– very flavorful and well above average tastiness for mint tea. The Little loved her chocolate cake(what’s not to love?) and I tried a bite, and found it not overly sweet. All in all, a very cozy spot. Look forward to future visits as this very new business gets it’s groove on :)

I’ve been to Coyle’s three times since they opened a few months ago. I was ecstatic to find out that North Seattle would have another bakery! The food quality is amazing and the prices are on point. The first day I went, I was at the door at 7:05am to grab my goodies. I walked away with a box($ 40) worth of product. I don’t have a single complaint. While I’m a fan of flaky croissants and pan au chocolat, the millionaire’s shortbread stole my heart. How such a small thing can bring so much joy, I’ll never know. The ham and cheese croissant is absolutely breathtaking — so buttery, flaky, and delicious! The second time I went, I was much more chilled. The selection wasn’t very big, I believe there were about 7 different kinds of items in the case. I picked out a few different kinds of croissants because they didn’t have much else. The third time I went, the selection was even smaller. I’ve also been there three different times a day since I hear goodies are always coming out of the oven. Still not much luck. You can«like» their Facebook page where they post what’s coming out sometimes. On this visit, I left without buying anything and went to another bakery where I knew I could find more items in the case. The staff has always been friendly, even when I’ve seen them deal with difficult customers. The bottom line is the baked goods are great! I just don’t have the time to make dry runs to the storefront only to be disappointed or have to settle for things I don’t want.

I am so excited for Rachel Coyle and her new brick and mortar bakeshop! I have been a fan since she was doing her pop-ups in Fremont and from the looks of opening weekend, she has a lot of fans! Lines were out the door, pastries getting snatched up left and right. I thought I was clever going in at around 8:30 am, thinking the line wouldn’t be so bad and that there would be a lot of pastries to choose from. I was completely wrong. I went in and the last of the regular buttered croissants were taken, there were a few sweet pastries left so I got the Rhubarb Bundt Cake(very moist and perfectly sweet), Millionaire’s Shortbread(has chocolate and I believe a caramel/coffee layer to it, oh it’s divine), and at the very end right before I had to pay I saw a fresh batch of ham and cheese croissants so I snatched two of those.(nothing is better than a fresh croissant out of the oven, perfect in every way). I also ordered two lattes, one with their homemade vanilla syrup. They go as small as 8 oz cups which is honestly perfect for me. The lattes were perfect and the syrup wasn’t overly sweet. All these were familiar from her pop ups. I was hoping to try something new but at this point it was take what you can get and get out of the way! I love the décor of this shop, it is classy, elegant, and cozy all at the same time. I think it definitely fits the atmosphere Rachel was trying to portray for her bakeshop and it fits perfectly in the Greenwood neighborhood. The chandelier was a nice touch and I found it very elegant and gave the place a unique touch. Pretty to gaze at when sitting and sipping on some coffee. I think opening weekend was a huge success. I know some people are disgruntled about everything being sold out, but what do you expect from a highly anticipated opening weekend? I honestly think that’s a mark of success and once a steady business rhythm is established Coyle’s will be even better!

Scone, Chocolate Cake, Mocha Scone(with dried blueberries): OMG, easily the best scone I’ve ever had. It’s crumbly with a flakey crust, imitates a moist center while keeping true to scone texture. You can tell this is made with a lot of real amazing butter. Chocolate Cake: Very balanced. Very moist. It’s not overly sweet so makes a fantastic breakfast, the sweet is mostly found in the frosting which is a texture of its on — not whipped, maybe creamy but with a hint of mousse. It is a classical velvety feel on the palate. Mocha: Not very sweet, a bit on the bitter side. Can’t taste any chocolate notes. The cream is real and nice though.

Went back for another delicious vanilla latte and since it was close to closing, all they had was a sponge cake and cream puffs. Ordered both and devoured them both. The cake had lemon curd and marscapone cheese, it was sooo good. The cream puffs were delicious as well, can’t wait to see if they introduce other flavors. Passion fruit please? I really thought Honore could do better than this place but I’ve seen more variety from Coyle’s in 2 visits than I have in many more to Honore.
