I ordered the rib plate, $ 11 plus tax. Does not come with a drink or corn bread. The rib meat had good flavor but the BBQ sauce tasted sour to me. Rather than sauce, I was surprised to see a lot of oil collected in the bottom of the to go plate. The pinto beans were ok, nothing special. The mac n cheese is homemade but I got a portion that had a really dark skin on it and it also soaked up the oil from the ribs. I asked for ‘hot’ and they are definitely hot. Almost too hot to eat, but the sour flavor is what I find almost intolerable. Way too much vinegar. I will not be returning. Also, it comes with two slices of white bread, raw onion slices and a pickle spear.

Best BBQ place in the Fort Hood area! GREAT service and GREATBBQ. The pork sandwich was amazing and the ribs are to die for, especially with the spicy BBQ sauce. Highly recommend this place if you are in the mood for some great BBQ.

Not a bad place at all. You smell the smoke as soon as you walk in and i love that about bbq restaurants. If your looking for a nonjudgmental place to eat and also not worried about spilling food on your shirt, this is one of those places. Employees are very friendly. There bbq sauce is good for the brisket that they smoke but I don’t believe it went well with the ribs. The flavors are there but don’t expect to be blown away. Side note I do believe everything is made in advanced and held until a order is placed.

The only thing you will wish for at this rustic no frills BBQ dive is for MORE, MORE, MORE. Brisket has a great crust, but is not over seasoned. Pull apart tender but does not disintegrate in your hands(sorry Rudy’s). The sauce… I had their spicy version. Just a hint of light pepper. It’s a very thin vinegar based, but very dark on color with beautiful red and light brown seasonings. There’s plenty of drippings in the sauce, a must have if you’re making your own sauce. It soaks right into the meat without masking the taste of the meat. A couple of taps on the side of my paper trough to get the last few drops off and it’s fantastic in the mouth. It’s right up there with Cooper’s… but is less vinegar in flavor, and more subtle pepper coming through. Cooper’s can be on the sour side depending on who’s mixing it that day. Had the pork shoulder. It was very smokie, and tender. Great crust with just the right amount of seasoning. No sides this time. This was all about the meat. I was greeted with a down home hello and a smile, and the smell of gently smoked meats. Hailing from central Texas, I’ve tried them all. Still haven’t tried Franklin’s because I will not wait in a three hour line, only to have them run out of meat before its your turn. I see that as a lack of customer service. Why not make the place bigger, and make enough to feed them all? Answer: think OPEC and the oil cartel that controls prices by limiting supply. I’m not falling for it. Here are my top five, in no specific order. Read them so you’ll determine preference of this particular pallette. Styles Switch in Austin. Hands down the best sausage, period. Get the jal-cheddar or the spicy. Snaps when you bite it. Very meaty. Really good sized link. Pork ribs and huge beef rib to die for. No long waiting. Good sauce. John Meuller in Austin– John is my main man. Love the guy. Great sauce, very nice brisket with a crust you’ll get nowhere else. Good sausage. Usually not a long wait. Iron Works in Austin– just the beef ribs. Very smokie thick sauce that clings to the ribs. The perfect sauce to go with beef ribs. Not a long wait. Maurice’s in Killeen. Yum. Cooper’s in Llano. Prime rib with Cooper’s sauce. Heavenly. They have a thick crunchy pork chop too. Line never longer than ten minutes during by hunting season. A pioneer in sauce. Southside in Elgin– BBQ pork steak. Think oversized bone in pork chop cut thin with a ring of fat along one side. No sauce required. It’s fantastic. Good sausage. They have a lone that moves very quickly. Sauce is good. City Market in Giddings– pork steak, brisket… The chunky sauce is just the right amount of sweetness. Never a long line. Hope this helps.

On point! The brisket was tender with great flavor. The pork was incredible with hints of Rosemary. The mac n cheese was hands down some of the best I’ve ever had. Extra cheesy!!! The potato, beans, and corn bread were also delicious! All the employees were very welcoming and polite. I cant wait to go back!!!

It’s good but when Maurice was alive and cooking this place couldn’t be beat! Used to come here as a kid in the early 1970’s Food overall is good and not a no-go for me but there are better bbq places in Killeen/HH area.

You know, I really want to like this place. I’ve been here at least 6 different times, I always get the same thing but I never get a consistent meal. I am a creature of habit and making me try something different after I’ve decided what I like is like pulling teeth. That being said you could ascertain that I know what I’m talking about when I comment on one specific meal. I always get the chopped pork sandwich, spicy and with pickles, no onions. Sometimes it’s good, sometimes it sucks. When it’s good, I can eat two in one sitting, when it’s bad, I get tired of pulling chunks of fat out of my sandwich and end up throwing half of it away. I can’t speak about the rest of the food there because like I said, I only get one thing. The atmosphere is dingy and dank, it smells old and isn’t really the most welcoming looking place, I never sit there and eat. The kitchen reminds me of the bbq restaurant from«Planet Terror» kind of dark and scary. I hope others have had good experiences with the rest of their food, but I for one don’t know if I’ll be giving them too many more chances. And anyways $ 17 for two sandwiches and a side of potato salad is no cheap meal, especially if you throw half the sandwich away. Oh btw the potato salad isn’t that good either.

My dad brought dinner home from this place and it was terrible. He got ribs. They FORGOT bbq sauce. It was dry like jerky and insanely salty. Kraft makes better mac n cheese in a box. The beans were sposed to be baked beans but were something else and not tasty, cornbread was hard and dry. Veggies were kinda ok but also really salty. Waste of money. Totally regret trying this place.

Maurices is average. I liked the flavor of the ribs but not so much the meat itself. The mac and cheese was horrible. it was watery and lumpy, just nasty. All in all, nothing you can’t make at home. One visit was enough. Im looking for another place

Not fancy, just good old fashioned BBQ. The gentleman that owns/runs Maurice’s BBQ is an Army veteran and knows his Q. He’s the 2nd generation owner. I believe his father started it. You order at the counter, have a seat and it is delivered to your table. In Texas”, it’s all about the brisket.” they say. Mauric’e’s does it right. His sausage is also tasty. If you’re looking for décor or atmosphere, keep driving. But if it’s great food you want, give Maurice’s BBQ a try. No beer or wine, but you’re welcome to BYOB and enjoy it with your food order. No corkage fee. Just y’all come. PS: be sure to read the yellowed newspaper reviews posted on the wall.

Loved this place — food was super, service was great and the history of the people/place just added to the experience. Doesn’t look like much from the outside — what BBQ place does — but the place was the best! The people were real and just served unreal food. I had the pork plate(hot) with green beans, slaw, and a desert of peach cobbler. Did I say I liked this place? I liked it a lot! Oh, and the price was fantastic too!

Disapointing my husband brought home ribs from here and they were so dry the were almost like jerky. I brought them back to them and they replaced them, the second set were better but still not wonderful. It was annoying to me that I had to drive all the way back to get what I should have had in the first place. The guy knew he gave us some dried out ribs!

Went here on a whim, usually the old run down looking reasteraunts have the best food… boy was i wrong… the staff was very friendly and helpfull… i asked a customer what was good he replied with“cant go wrong with the chicken”…i ordered the chicken and ribs and i should have just ordered the chicken… the ribs were awfull, dry and hard and prolly some of the worst ribs ive ever had… The sides were ok… unless i was eating lastweeks ribbs i would go elsewhere… EATTHECHICKEN!

Awesome local BBQ joint that claims to be «not a restaurant, but a BBQ experience. The prices are very reasonable, the food is good, and the staff is very warm and friendly. I got the beef plate(spicy), collard greens, and mac n’ cheese. The beef was tender and delicious with lots of fatty pieces. Yum! The spicy BBQ sauce is a vinegar base type of sauce and the spices are no joke– you nose will run and you will sweat profusely. The collard greens were pretty decent, and the mac n’ cheese was very cheesy! I also ordered their sweet tea, which was very lemony and not what I was used to. But I also think McCallister’s sweet tea is the best and any other place that I’ve had sweet tea pales in comparison. This place is in an odd location, and the décor is very beat up. Plus their air condition is not that great so don’t expect a fancy smancy experience. Its just down BBQ done right.

What a find!!! My hubby and I were about to drive to Austin in search of good BBQ but instead decided to go local and eat at this place. Beautiful brisket(and also enthusiastically approved by my Texan husband)! Succulent collard greens! You must order the peach cobbler! And fun history to read about on the walls. And cheap! Cheap and tasty and not a chain restaurant! In this area? It does exist!

Maurice’s is fantastic. The food is great, the dining room is a great place to sit with friends, and the people are extremely nice, with the exception of the old dude who inherited the place. He’s not un-nice, he just doesn’t seem to care if you are there or not, which is odd, since he seems to be the one benefiting most from your patronage. But whatever, he doesn’t work the counter or the dining room. You order and pay at the counter right when you walk in, then get your drinks, then walk out to the dining room and then they bring you your food. Bring your own beer! If you forget, there are plenty of stores within a couple of blocks. They ask you to pour it into one of their cups, but they are totally OK with BYOB and people do it regularly. It pays to ask for white meat if you want chicken. My favorites are the pork, which is shredded, and the beef brisket. Get the hot sauce if you like hot food, its not too hot. All of the sides are good, but especially the macaroni and cheese. And you must get peach cobbler. You must! Hopefully you get there before they run out.
