Sat out in their patio, enjoying the dusk in Manitou Springs, CO. On their sampler plater(when I ordered it, was afraid it would be too much food) but it was JUST enough for one person. Brisket, smoked chicken — AWESOME(perfectly cooked, juicy — not crumbly) pulled pork — was dry, but nice smoke and spice to it. spare ribs — slightly fatty, coulda been cooked longer, good flavor. BBQ Beans — good flavor, very tomato-y(I think they’re serve the beans vegetarian style… would have liked some meat mixed in) Having spoked with a few of the waitresses there, I found out Charlie is from Texas, and for his restaurant uses a mix of hickory and mesquite for smoking.(to me, its an odd mix — but thats just me) its very obviously Charlie knows what hes doing, and he knows what he likes — he’s not out to serve mediocre bbq, its how he likes it, and if you dont. fine. go someplace else. To me, his BBQ sauce is a lil odd — very tart and tomato-y. I got everything served to me dry, so I could taste the meat alone — and have the option of dipping(which I did half the time) its a great lil AUTHENTIC bbq joint… (try the cobbler, its cheap and very good.)
