This is our new favorite breakfast place. The service is fantastic, the food is amazing and they do a nitro coffee that is out of this world. It’s such a cute little place with great ambiance. We can’t wait to try dinner!

Hip and delish. Great vibe, awesome service. Kids loved the French Toast and the parental units and older brother dug the burrito, blue plate(yummy combo of toast, ricotta, crisp kale and sunny side up egg) and classic eggs & hash. Papa says best breakfast he had in CO. Coffee was outstanding.

Very quaint, very small hole in the wall in an industrial area in Carbondale. If you think you’re lost, you’re probably close. I had the Silo Burger with caramelized onions and bacon with the«house hash.» Washed it down with a Hoppa Road Imperial IPA from Roaring Fork, brewed just 3 doors down. Wife had the turkey club and kiddo had the grilled cheese. Silo is small so there isn’t room for much of a crowd, and a load of locals came in after we got our food.(Thankfully) I was STUNNED by the quality. I expected«pretty good» and they delivered«amazing.» Silo is definitely worth the stop if you’re en route to Aspen.

This place is a hidden gem. It’s in the middle of what looks like an apartment complex, and it is tiny inside, but don’t let that fool you — this place is legit. We had the French toast and the breakfast sandwich with bacon and avocado. Everything was perfectly prepared and delicious. We were just stopping through on our way to Maroon Bells and we are so happy we did. Great service and food. Would definitely recommend!

Stopped by for a great lunch the other day. The grilled cheese is the sandwich to have, it is super hot, and filled with bacon. The pork tacos were a pleasant surprise, the pickled red onion taking the dish to another level. Service was fantastic. Friendly, welcoming and attentive from beginning to end.

Stopped here for lunch and was impressed. We split a Cubano sandwich and had a cup of lentil soup. The food was unusual with lots of nice touches(toppings for the soup, really high quality ingredients). Cool décor, great music and they have cappuccinos and alcohol drinks. Will definitely be back.

This place is great, tons of veggie options, and great breakfast carne selections. Salads, burgers and flatbreads and a killer Cuban sandwich. You can also have food delivered to the brewery 2 doors down. Don’t sleep on this Carbondale gem.

An intimate eatery well suited to a leisurely meal and catching up with a friend. Inside are six tables and some room at the bar. No TV. BONUS! Every seat is a good seat for conversation. Outside, a small deck has a great view of Mt Sopris — if you look around the ever present DD moving van. I imagine this being an amazing place to chill and watch the sunset. They seem to have a local, high quality ingredient focus with some interesting offerings like lamb tacos and duck eggs, but not much for vegetarians. Sher says the house hash, farm eggs, and coffee were delicious and surprisingly filling. I had the Margherita flatbread pizza — not really anything flatbready about it — just a blah pizza. The 3 rating comes from Sher liking her food, No TV, and me imagining this would be a cool place to hang out with coffee/wine/beer and a friend.

Great little restaurant! I had the Cuban sandwich and it was excellent $ 10 the hash that came with it was very good had sweet potatoes in it! All gourmet sandwiches next time will try the chili. Good beer choices too

Love this gem. The ambiance and music have been great every time I go. We ordered an array of vegetarian plates that were great to share. I had a perfect almond milk latte as well to boot. I’ll be back over and over. I’m looking forward to dining there in the summer months too!

I feel like I just discovered a closely-held secret. I found it while visiting the RF Beer Co tasting room a few doors down. You can order their excellent food at Roaring Fork. This is a pretty new place, in the space formerly occupied by Fold. It sounds like they may be working on fine tuning a few things, but on my visits here everything has been flawless. The space is intimate, artfully rustic, and welcoming. The staff was warm, engaging, and funny. The food is a seasonal and creative array of breakfast items, sandwiches and flatbread pizzas. They have an impressive selection of Colorado beers, quality/value wines and Colorado spirits. So far I’ve had the cubano sandwich, which was perfect, and a poached pear flatbread pizza that was outstanding. They have a sweet little patio with a view of mount sopris that I’m looking forward to enjoying in warmer months. I found my new favorite spot in Carbondale.

What’s the deal here? Is there anybody at Silo that knows the first thing about food and table service? Nobody greeted me when I walked in, there was nothing green on the menu, the food took forever and was caked in coarse salt. Seriously, why bother going into the food service business if you are not going to even try?

One star for cute space and good music. Service: horrendous. Inattentive, grudging, uncomfortable. Burger: over-cooked, WAY too salty, lame side of breakfast potatoes. Pizza: i can barely speak. Worse than a frozen pizza from City Market. Worst dining experience I’ve had in a looooong time.
