Scott, chef of The Duncan team catering, was outstanding as our personal chef for a family weekend in Wimberly. He was a pleasure to have in «our» kitchen as well as serving us fabulous food. I worked with him several weeks prior personalizing breakfast and dinner menus for our family party of 20. He was referred to me by the VRBO owners of our house rental. Scott was personable, professional, as well as fairly priced. Having him cook, serve, and clean up, truly made it a vacation too. As my mom and I were driving through downtown Wimberley, TX, I spotted something I hadn’t spotted before: A FOODTRAILER. Yep. You heard me right. There’s a food trailer in my teeny, tiny hometown of Wimberley, TX. Wimberely is a small, scenic village, nestled in the beautiful Texas Hill Country. We’re not exactly known for being a hot bed of excitement and cool new things. «WHATISTHAT?!» I practically screamed. Luckily, my mom became just as intrigued as I was, and cut across three lanes of «traffic»(it was as heavy as it gets in downtown Wimberley) to swing into a parking space just in front of the new trailer. EXCITING. With a new enthusiasm running through my veins, I headed to the service window, and was greeted by Duncan’s Traveling Bistro’s cook/owner, Scott Duncan. I learned that this was the bistro’s first day open here in Wimberley, but when it comes to mobile cooking, this isn’t their first rodeo. They’d been active in the mobile catering business for quite some time, under the name Duncan Team Catering. Their motto is «Have Kitchen. Will Travel,» after all! I mean, they served almost 5,000 burgers during the big Formula 1 race a few months ago. Whoa. That’s a ton of burgers! Impressive if you ask me! Anyway, after my mom and I went over the brief, yet delicious menu(Southwestern Chicken Caesar wrap, Texas Style Philly Cheeseteak, Asian Pulled Pork Sandwich & Not your average cheeseburger), we asked what they’d recommend. Scott and his son/cook suggested their Southwestern Chicken Caesar wrap. Scott said that he had been working on the Caesar dressing for about 20 years, and finally perfected it. Zing! His daughter, a self-professed cheeseburger connoisseur, recommended the, «Not Your Average Cheeseburger,» which features a ground beef and cheese mixture. This way, you get melty cheese in every bite! While I appreciate recommendations, and usually go with recommendations, I really just couldn’t pass up their Texas Cheesesteak Wrap. Disclaimer: I never expected a true to form cheesesteak like those from Philly, but something about a spicy«cheesesteak» with pico de gallo, and melted jack cheese, wrapped in a grilled tortilla sounded beyond amazing to me. I made my mind up. Texas Cheesesteak and fries, coming right up! While we waited for the order, my mom, the ever-adventurous woman that she is, requested a tour… Yep. A TOUR. Well, Scott graciously granted us access into his trailer, and I was secretly really pumped. This was my first time in one of these beauties, and wow, it was gorgeous. Scott told us that the trailer was custom built, with all the professional kitchen perks. There was an enormous gas stove, two ovens, freezer space, a double door refrigerator, a cold station, and a hot box taller than me… It was amazing. But it wasn’t as amazing as what came out of that kitchen. Can I be perfectly honest? I was surprised by the looks and then the taste of what I ordered. I’m not sure why I was surprised, but I was. First of all, the plate was enticing. The fries were steaming hot and golden brown. The wrap looked SO fresh and colorful. The juicy meat was topped with a nice amount of freshly made pico and yummy cheese. But what got me most about this sandwich was the smell. Holy cow. It was enough to make my mouth water beyond capacity and let out a little drool. I was hooked on first bite. I wanted another bite. Then another. While I enjoyed my sandwich my mom couldn’t stop talking about how amazing the fries were, but I was too busy complimenting and delightfully sighing over my wrap. The steak in the Texas Cheesesteak Wrap was super tender, and had such an amazing flavor… I don’t know what it was, but it was spicy, warm and intense, yet it managed to carry a freshness and a bold brightness that was totally out of left field. Time for fries! My mom was right. These were perfect fries. They were hot, crispy, fluffy, salty and… seasoned. I don’t usually like seasoned fries, but these seasoned fries changed my view on seasoned fries. Can I say seasoned fries again? Yep. Yum-O. I truly am excited to have such a delicious food trailer like Duncan’s Traveling Bistro here in my small little town, and I promise you, I’ll be back. Next time I’ll try the Southwestern Chicken Caesar. I mean, how can I pass up trying a dressing that took twenty years to perfect? And hey, if you’re interested, and I don’t know why you wouldn’t be, I hear they’re having a bit of a grand opening this coming Saturday!
