The Salmon Guy, found sporadically in the parking lot of the Leschi Center/Seattle Indian Center at the foot of Beacon Hill, is the man to go to for smoked salmon in this town. Look for a red pickup truck with Canadian plates and a camper top, with the back open to reveal a cooler or two of properly smoked salmon. Vacuum packed sockeye fillets, king slabs, with or without a generous spackling of cracked black pepper for some spiciness. Also often has jars of smoked salmon«candy,» aka strips of salmon smoked to the point of impending«jerkyness.» The bonus: It’s cheap — around $ 8/lb. It’s about as good as smoked salmon gets. You are buying from a Native American who caught and smoked and transported the fish himself. Out of the back of a truck in a community center parking lot, with a cardboard sign your only clue. What’s not to love?
