Trébol Presents Costillas Diablas

A new food cart? yes, but it’s not a new business. Trebol announced earlier about a food cart and I’ve been anxiously waiting for it to open and today i finally had the pleasure of visiting them.
It’s a rather simple menu, tofu or boar tacos for 3 bucks, boar torta or boar ribs for 6. Though i enjoyed the food there was a few things that could be improved in my opinion. The tacos, fresh grilled tortillas would have been great instead. Mines wasn’t soft but a bit dried out. The bread for the torta, i would have liked it to be crustier but not a deal breaker.
Overall it’s very good and the rib, i had to save that for last. Frenched and cleaned up it looked more like lamb but the taste was sure pork. Super tender falling of the bone pork. how great is that. Also i couldn’t get enough of their house pickles. that stuff is so delicious, i hope they bottle it one day for me to purchase.
