Thomas & Sons Distillery is the distilled spirits project of Townshend’s Tea. I had a chance to taste their current lineup. The spirits are European-style herbal bitter liquors. That means they would make excellent craft cocktail ingredients. They have reached out to a small number of local cocktail masters. It would be possible to simply mix them with soda water too. I was pretty astonished at their process. They brew the tea with sugar and a kombucha scoby. Then they distill, concentrating the tea and other flavorings. The result really has no resemblance to kombucha. Think Campari and similar, some with a specific tea nose. They have tasting times at the distillery listed on their website. The spirits are available at their Division tea room and select OLCC stores. Well worth experiencing if you enjoy bitter liquors, and a great local find that is just on the upswing.
