Al pastor is the best. Meats are prepared over a grill first then finished of on the griddle. Freshly made tortillas puts the tocos over the top.

This is a SHRINETOSTREETFOOD. A TORTILLATEMPLE. Compare this to your favorite street food and be ready for a new favorite. John B. review that says this is life altering — is an understatement. This is a Bourdain-esque pick multiplied by a tripleD level experience. This epitomizes the entrepreneurial talents and fortitude of people who want to bring the best food to the streets of LA. It is not a cart. It is not a truck or trailer. It is a stand that gets erected daily complete with awning, propane-fired steam table, flattop grill, hand cranked steel roller, well seasoned BBG grill with mesquite charcoal and a table with one gallon plastic tubs of condiments(hot red salsa, yummy tomatillo salsa, Pico de Gallo, onions & cilantro, avocado sauce, limes, etc, etc, etc). It starts with corn masa, handcranked into thick tortillas(gorditas). Next, the tortillas are cooked on the flat top to a touch of golden goodness. Look at the diameter of those torts. Then you select from the fillings. I didn’t get all of them, but they have at least, carne asada, marinated pork(could be called adobada, al pastor or just«pork» which is what they call it), chorizo, chicken and lengua(tongue). Also they have tripitas, buche and cabeza. The beans are frijoles de la olla(from the pot) and the rice is seasoned mexican rice. I tried a plate of three tacos, cabeza(beef cheeks), chorizo and carne asada. I added various salsas and other condiments along with the fresh lime. Holy Mother of Pearl — Santa Maria — what an explosion of flavor. Each meat was distinctive in its taste and texture and brought out the Mexican characteristic that belongs to that meat style. The corn tortilla did not require chewing — it did not melt in my mouth — but rather DISSOLVEDINMYMOUTH in a warm sweetness you can only get from a freshly made gordita. Once the tortilla dissolves, your mouth is left with a kaleidoscope of flavors all stimulating your taste buds without the gumminess or starchiness of a regular tortilla. $ 1.25 taco is a steal for a monster tortilla filled with meat. Not wanting the experience to end, I ordered a «pork» burrito para llevar(to go). It started with a flour tortilla the size of a medium pizza. It was warmed on the flat top and then two big scoops of pork were added along with a scoops of mexican rice and the beautiful pintos. The owner walks to the condiment table and asks what you want him to add. GONEARETHEDAYSWHENYOUHAVETOTEAROPENYOURBURRITO(and eff it up) TOADDCONDIMENTS. He then attempts to roll it up, because this has now grown to titan size. Into foil and paper wrapping and then into a plastic bag — this burrito would survived galactic travel wihout leaking. Upon my later return to my cave, I weighed the burrito and it came in just OVER A POUND. $ 4 for the burrito. The beans and rice were delicious complements to the meat. I shared my new burrito discovery with a wine pairing that could stand up to the chewy, porky goodness that Anthony B loves. The wine was Twilight Cellars«Gravity» 2007 Paso Robles Syrah. Highly recommended for any Unilocaler. Parking on the street, around the corner and in a market parking lot are available. One block south of Gage at Central. It is ½ way between the 110 freeway and Huntington Park. I took a photo of typical customers I got there around 6 pm on Thusday and it looked like they had just started the night’s service.

LIFEALTERINGLYGOOD The food here is amazing. The service is wonderfully kind. It’s everything that Mexican street food can be but so seldom is. Al Pastor-Jaw droppingly good Carne Asada-Amazing I even tried the tongue and it was good. These guys take pride in the food they make. They want customers to come again and to bring their friends and that commitment shines through. They even have a cool, hand cranked tortilla maker! I love Mexican and this is some of the best I’ve ever had!
