It’s amazing somebody didn’t think of this sooner. Take an old school roach coach, pare down the menu a little, give it a flashy paint job and take the standard roach coach fare to a new level of quality. You wont find anything out of the ordinary here, but whatever you choose will be well executed. I tried their Texas Burger which is a pastrami burger. It was one of the best pastrami burgers I’ve ever had. And it was done simply. Good bun, good sized, good quality patty, a heap of juicy pastrami, mustard and 2 big chunky deli dill pickles. I was impressed with the quality and the price was reasonable. If everything they make is at this level, this truck should become rather popular.

I have to preface my review with a disclaimer, I really wanted french fries. The only reason my friend and I chose this truck was because they had burgers and fries.(We had been waiting for another truck for about 20 min and got out of line). Once we ordered we heard him tell the lady behind us that we had ordered the last fries of the night. She proceeded to plead with him and he gave her a huge tray of fries. After waiting about 20 – 30 min for a tuna melt and chili cheese burger(there were four people ahead of us and two people in the kitchen so they need to figure out their line cooking because it’s not working) the man, who was very nice told us that he didn’t have any more fries and that we could take a bag of chips if we wanted. If I had not been in the mood for fries and if he had not given my fries away to the lady behind us I would have been fine but because he knew how many fries were left and he proceeded to give my food away, the truck put a bad taste in my mouth. As for the food, both tuna melt and burger had an obscene amount of mayo.(We had to throw our bottom buns out because there was no salvaging them without mayo). The chili cheese burger came with chili, pickles, cheese, lettuce, tomato and mayo. It was decent but could definitely use more chili and didn’ t need the lettuce, tomato or mayo. If they can figure out how to cook faster, ratio their food better and decrease the amount of mayo then I may try them again but until then, definitely no. *They accept credit cards but charge a $ 0.50 fee.

Caridad Cuisine seems to be a fusion between the old school roach coaches and the new breed of gourmet trucks. The menu is not really awe-inspiring, burgers, sandwiches, french fries and burritos, almost all with traditional toppings. This truck would appeal to folks who have traditional tastes and really aren;t into trying anything new. But the food was good. I had a shrimp burrito for $ 6.00 that was as good as can be. Plenty of warm fluffy rice, tomatoes, hot sauce and of course shrimp. Sure it was uncomplicated; but it filled me up and made me happy.
