Why and how does this place exist? After a few visits to Lakeland, I quickly realize there is little to no local cuisine that isn’t bbq. When it occurred to me to look for a bakery, Bianca’s bakery and shows up with a whopping 3 reviews. It deserves more. There is nothing comparable in the immediate area and in a more urban location, Bianca would be flooded with business. This is a small, but comfortable café– maybe 4 or 5 tables– and very well taken care of. The décor was tasteful from the table setup to the clean bathroom. Even the plates were individualized. We ordered chicken salad on croissant and parfait. The price was extremely good for the quality. The croissant was flakey and fresh, the cherries were a pleasant surprise. The parfait had great elements like fresh fruits, crutons, walnuts and honey. I would have given 5 stars for the sandwich, but the parfait was missing maybe a layer or another element that would have made it really fantastic. And then dessert. So she tells me it’s been a slow month so no Tres Leche. I was devastated to hear they usually offered it. She told me to call ahead next time I was in town, talk about great customer service that values loyalty– this is how you run a business people! We went with the Jack Daniel’s cake. It was life changing, I felt the axes of my reality shift. The cake was perfectly moist and held together. Not overly sweet, but yes it was decadent. I smeared a piece of cake on the Jack Daniel’s reduction and wow. It was difficult to keep it PG. This is an extremely skilled baker in the middle of nowhere. I am a fan of the food and service. I will be back for the Tres Leche and more.

Excellent little bakery and café. She makes some really good pies and cakes. She’ll make anything you request. The lunch items are really good and sometimes there are Peruvian lunch specials. We have been to one of her cooking classes and plan to attend more. The prices are really good and everything is fresh. We really needed something like this on this end of town
