OK you dutch bastards, pull up your britches because a real life piece of the South has dropped itself down into the end of your little closed off community. Courtney’s Smoke Shack is an amazing piece of entrepreneurial spirit mixed in with love for what food is all about. Pull into the parking lot and you are greeted with the white and red trailer that Courtney’s is housed in. You don’t sit down, you talk with Courtney and his compatriot about what they have and what they have left. Both of the guys that run the shack are obviously passionate about what they do. The smiles in their faces tell everything when you take your first taste of their ribs, chicken or anything that they bless with their love and sauce. I actually have the styrofoam container that my ribs came in still sitting empty save for the sweet, slightly spicy sauce that graced the ribs coating the bottom. I am literally going to lick the container clean later on today. To say it is amazing insults the genius of these two men! Whatever they are serving, eat it and shut the hell up. It is phenomenal! Grilled corn, beans, and all kinds of sides are available as well, but the meats and sauces will keep me coming back. I have been fortunate enough to be the last person to get served the last two days running, and the ribs are as transcendent as the chicken is. You must, MUST get in your vehicle and go support these two men and their quest to secure an actual brick and mortar structure to house their talents. Do me, do yourself, and do this cloistered community a favor and go to Courtney’s. You will not be disappointed. And tell them I sent you.
