I love Cellars at Jasper Hall. Though I’m relatively local to VT, I was first introduced to the glory that is Harbison at a San Francisco farmer’s market. After one bite of the ooey gooey fragrant delicious cheese, I immediately bought a wheel for my family and I. I’ve been hooked ever since. The cheese is wrapped in bark, which is what makes it so flavorful I’ve also tried their Moses Sleeper cheese, which was also tasty but Harbison will always be my Cellars True Love. Can’t wait to try more including their Winnimere, which sounds like it’s in the same vein of Harbison. I bought a wheel and a half of Harbison at my local co-op and it made my day. Harbison may be my favorite cheese of all time; it is my favorite cheese now. Cellars may be my favorite cheese maker. Love, love, love it,.

I was exposed to the glory of Cellars at the Hill Farmstead brewery event! They brought four cheeses including the Constant Bliss, Landaff and Bayley Hazen Blue. They gave us samples of all four and so much info about each! Then we could get a cheese plate or a grilled cheese(with two cheeses) for $ 5. The cheeses were so flavorful and amazing. Yum, yum– YUUUM. Generally though, I believe they are primarily an online store and supplier to other stores. You can check on their website where to get their goods. Their story is pretty awesome too… they started in 2003 and make cheese from their 45 Ayrshire cows. If you are craving cheese making skillz, they offer internships!
