This is some damn good street food. Pablo is super efficient and makes some awesome lengua and papas tacos. He’ll chop it up with you the whole time he’s cooking, too. I get one just about every time I go to Equinox now.

HOLYMOLÉ!!! Dude… these tacos are BOMB!!! Even the vegetarian tacos are delicious… and I’m not even a vegetarian! Lengua = on point, so good! I got seconds! Al pastor = deliciously satisfying Carnitas = amazing chipotle BBQ flavor Quitlacoche = vegetarian and wonderful Flor de Calabaza = vegetarian squash blossom euphoria ATACOLYPSENOW can be found outside of Equinox Brewery on Fridays and Saturdays starting at 6pm. They are also open in front of Pateros Brewery on Thursdays. Pablo is an awesome chef and really cares about his customers and the food he serves. I love that I see him constantly using a laser heat thermometer to make sure the grill is hot and that the food is getting cooked properly. I’ve lived in LA for 9 years and ATACOLYPSENOW in Fort Collins, CO definitely takes me back to the street taco feel with a yummy taco for an inexpensive price… but still with quality ingredients. If you want some late night taco munchies to go with your beer, this is the place to be. I think I’m about to order another taco…

As I write this review the delectable memories of Atacolypse Now, my new favorite taco stand/truck in Fort Collins, are freshly inspired. The sweet tenderness and jumping spices of the mole, the perfectly spiced chunks of pollo asado, the falling-apart luxurious unfolding of tastes within the carnitas. They are the pinnacle of street tacos served up with appreciative smiles and warm hospitality by Joe and Pablo, churning out delectable snack/meal/probably banquet if asked(but DO ask). At $ 2 each the tacos are more than a steal. They’re a robbery. You think I’m kidding. I’m not. This is Atacolypse Now, an amazing stand I frequent when I head to Equinox Brewing. Like most food trucks/stands Atacolpyse Now moves around town to different locations, all of which are listed on their website. Equinox just happens to be my absolute favorite local brewery. But more on Equinox later. About these tacos… You can get pretty much anything at this food stand and it’s going to be good, but I always ask the guys what I should order. The menu is diverse and serves both vegetarians and carnivores, and it does so well: tonight, squash blossom tacos were the featured veg special. Tacos come with your choice of lime, onions, cilantro, queso and whatever salsa you’d like. Of course, there’s a good smattering of hot sauces to choose from too(ask Joe or Pablo for recommendations; they make great pairing suggestions based specifically on your order). I get everything(the green salsa is excellent). Talk about maximizing your $ 2. I’ve never had a bad experience here. I know, it’s like, «well, Dondi, they’re *tacos*…» but no. There are plenty of ways to mess up tacos, and at Atacolypse Now, they never do. The marinades and sauces are always spot-on. The meats are always perfectly done. The squash blossoms are amazing. And the guys who run the show are kind, polite, clever and helpful with suggestions. I’ve seen the place with lines ten deep or more plenty of times. Everyone I know who has eaten here loves it, and everyone who hasn’t should. Quickly. I’ve lived in and around Fort Collins for nearly 20 years and have had plenty of disappointments in the way of restaurants, but Atacolypse Now never fails me.
