Wanted to write a quick update. The owner mentioned that Johnny-Gold Apples are better for eating relatively quickly and don’t keep all that well. I found a pretty simple trick that lets you get around this problem. 1) Cut up apples as desired(peel if your want) 2) Place them in a large mixing bowl 3) Pour lightly salted water over the apples(I used 1tsp/5 cups) 4) Continue adding unsalted water until the apples are just barely covered(optional to add a bit of lemon juice) 5) Drain the apples and let them dry. 6) Freeze them in freezer bags(single layers work best) The apples can then be used in almost any recipe, straight out of the freezer. They actually work better if you don’t defrost them first! I’ve used mine in several different recipes this winter, everything from cobbler to chutney and they’ve worked great! Makes it that much easier to enjoy the picking knowing you don’t have to worry about using them all right away. Can’t wait to go back next fall to get some more!
