A well-kept Denver secret — a place where you can get in on a Saturday night with a same-day reservation but have top notch food, specifically they excel at cooking meat — and that’s an endorsement from a former farm girl. The short ribs melt in your mouth, the duck is crispy skinned but tender inside, the wagyu beef meatloaf is tender and savory on top of garlic mash. And the service is some of the best in Denver — our server remembered us from almost a year ago, brought wines to taste even though I was only ordering by the glass. Just a top notch example of the Denver restaurant scene.

This is my all time favorite restaurant! They have the best menu that is constantly changing and everything is upscale and affordable! You can go eat local free range meat and then buy cuts from their counter. You can even request a specific cut or type of meat and they’re happy to do it. Best hidden gem in Denver hands down! I recommend it to anyone and everyone!!!

This place is cool, man. I love the concept of ‘snout to tail’ — respecting the animal and using every part of each animal to craft delicious dishes. This place champions that concept. The employees are super friendly, their tap list is extensive — especially for such a small joint, and the food. Oh the food. If you can come in between lunch and dinner, do that. We got such a cool, personalized experience and the chef even made us a few dishes off-menu. Tapas tasted were as follows: Crispy Pig Head Croquette with Carolina Reaper Aioli, Cured beef heart with house-made chimichurri, their ‘dinner donut’ — sweet outside and savory inside, shrimp bruschetta, and a bacon-wrapped date. Entrees: Bahn Bi Sandwich and the Butcher’s Burger — a lamb burger with chimichurri, eggplant tapenade, and tzadziki. I literally can’t talk enough about how delicious it all was and how cool the staff was. And I mean ‘literally’ — my friends have all heard the story of my journey to BB half a dozen times. Make sure you come in with an open mind and an empty stomach.

If you love meat, you need to visit! Try their sampler, and get a lil bit of errythang… you’ll be glad you did! So yummy, solid selection of beers as well. Loved the atmosphere, clean bathrooms and fantastic service. Our server was so knowledgeable about the entire menu! Always kept our water glasses full, and was so helpful in helping us pick out our food. I’d go back in a heartbeat!

Went in this week, Tuesday night for a friends birthday. It is a pretty small place with a cool vibe to it. It was pretty empty on this cold night but there were a few other’s that popped in. The service was great, all the staff was very attentive. Servers gave great info on all of the food as well as the drink selections which I always appreciate. I tried buffalo balls for the first time and they were actually pretty tasty! Also had the beef heart which was good. They are amuse’s so they are really small just one bite and kinda pricey but I suggest trying them. Also shared some sausages which were tasty too. Had the waygu meatloaf which was very tasty. Kind of small but after some appetizers it was enough. We hung out for a while eating and drinking and it was a blast. I would highly recommend it for a small group, date or just to grab a bite while in the area. I’ll definitely be back.

Fantastic service. Fun concept. Pretty good food, with room for improvement. Both the host and our server were particularly friendly and accommodating. The menu has sections for«amuses»(little tasting bites) for a few dollars each, shareables, salads, entrees and chops of meat. The amuses aren’t really shareable, but I also felt that the shareables were pretty small/non-substantial(for example, olives). It would be awesome if they added some appetizers to that section for people wanting something that isn’t tiny but isn’t an entire entrée. The amuses were so much fun! Definitely adds to the experience. You can — and should — try them all and receive a beautifully presented plate with each amuse for a discounted price. Most of them tasted fantastic — the beef heart, the wagyu tartare, and especially the oyster Rockefeller. Some of them, the deviled egg and the pig head in particular — were too salty or too something. We also split the Wagyu meatloaf. They plated it into two beautiful half plates for no charge which was so nice! It kind of just tasted like a hamburger patty, though. Next time, I’d try something from the chops section.

Great food and great service. David had the french dip and i had the deviled egg and charcuterie plate with cheese. If you’re at a place that specializes in meat, it’s a must. Our bartender told us which meat, cheese and sauces tonpair, and it was spot on. David polished off his french dip in minutes. Completely recommend if you are in Denver!

I don’t think there’s been a single Denver Dining Passport fail yet this season, and Butcher’s Bistro is certainly no exception. After perusing the book again recently before my hubby’s birthday, I decided that someplace named«Butcher’s Bistro» had to be a solid choice for a native Texan and it most certainly was. I think our waiter said they’ve been there for 14 months now and that they wanted to create a place where people in the food service industry would actually want to eat. I’m not in the industry, but I don’t see how this place doesn’t deliver on that principle. I mean — it just emanates coolness. And the whole butcher vibe — using the whole animal — is just awesome. I loved the meat counter up front too! Meal wise — everything was outstanding. I had the waygu steak & frites and hubby had the prime rib entrée. I think I actually preferred my entrée to his, but we LOVED the cabbage and au gratin potatoes that came with his prime rib. We even decided to be adventurous and start with their sampler appetizer which had a variety of things from deviled eggs to beef tongue and pig’s head. And, they were actually surprisingly good! I don’t think I’d have known they were offal if the menu hadn’t indicated them as such. We also loved our server! I unfortunately can’t remember his name, but he was awesome and very excited about the food and restaurant so that definitely lent to the experience. This is definitely on the re-visit list!

Full disclosure; I was beyond the point of hungry two hours before my husband and I got here. We were in the area for an event and didn’t have time to eat before. As luck would have it, I’ve also been looking for a great steakhouse and serendipitously found it! The neighborhood isn’t as swanky as, say Larimer Square, but the store front is very inviting. Once inside, check out the case of offerings in front or their gorgeous bar. The dining room isn’t large, but it’s light, Colorado-themed, and adequate. Also, there are no TVs, which is a huge plus! Most importantly, they know how to cook a steak. This might seem obvious, considering the name and the cuisine, but I’ve learned over the last few months that not all Denver establishments, even high end ones(ahem Shanahan’s) have no idea how to get the right temperature on a piece of meat. It’s rare for me to find a place that isn’t afraid to do anything under well done. If you like your steak rare to medium rare, Butcher’s Bistro is your place! I was also impressed by the Amuse«flight» with several preparations of offal. My favorite was the beef tongue, my husband really liked the deviled egg and bacon wrapped date. We didn’t do dessert this time or try any cocktails, but we were very happy with the Malbec and tap selections.

A lot of people come onto Unilocal to complain about how bad service was or how lukewarm some dishes were because they forget that they sit there for a while trying to get that perfect food photo for their social media apps. The food is good and the service was friendly as well. Ask the server a question and they’ll give you multiple options depending on what you feel like eating. They are fairly new but they know what they’re doing. Just try it out for yourself and you be the judge of how good the place is. Have an adventure!

At first I thought this restaurant was going to be our next go to spot. Great atmosphere with good drinks. The happy hour is on point with very creative bites at an awesome price. And everything on the menu looked mouthwatering. But I was very disappointed when my burger came out RAW and inedible! The waiter was gracious enough to comp the burger, but unfortunately it has left a bad taste in my mouth and we will not be returning.

When in doubt, order everything. Their Happy Hour, after all, is a spread of happiness. Everything from Spinach Croquettes to Craft Sausages is all worth ordering especially at their reasonable HH prices. If the in-house carefully curated menu isn’t enough reason to make you want everything on the menu, the service is. The server enthusiastically walked us through the menu and how they use the whole animal throughout the week. Thus, the menu and prices continuously changing. It’s a fabulous restaurant with an even more admiral concept. Denver is lucky to have such a gem. Plus, the tap list is strong.

We had dinner here recently and liked it just fine. We shared the ribeye plate and a bottle of Smith & Hook cabernet. Everything was good. Our favorites were the tasty cut of beef, the deviled egg, the pomme frites. Pig head appetizer was perfectly fine as well. Décor is modest, but we liked the old oak bar. Limited wine list and no whiskey were mild disappointments.

To say I adore this little meat haven is an understatement. The people are fabulous, the cocktails are inventive and the food is to die for. You can’t walk out of here without trying the cheese doughnut bites — not the official term but if you ask for that they will know what you’re talking about! They are the perfect tiny yet delicious first course. As my course I had to order the seafood soup — also not the official term. I know my food vocabulary is an embarrassment to foodies everywhere. You still need to try the seafood soup. And all of those to-go meats?! Whiskey jalapeño sausage? I will be back, again and again and again.

We had a group of 7 celebrating a Birthday and absolutely everyone loved their dinner selection. The staff was very attentive. Great atmosphere. We sat in the outside back patio seating with cute lights. We went on Monday so hardly anyone was there which I don’t mind. I’ll lead off by stating that I am very judicious with my fives. If I award a place a five, its worth it. I first met the folks behind this operation at Denver Big Eat. They were sampling house-made sausage and house-made pickles, both of which were outstanding in taste. The folks running the stand were very friendly as well and allowed me to have multiples. I made a mental note to check them out at some point. I had that opportunity today prior to watching the D-Backs game at Coors Field. I was greeted immediately and was educated on the menu selections. I selected a pair of sausages from their current lineup as well as their house fries and a French ale. The French ale was very strong and tasty; unfortunately I don’t remember the name of the brewery. Draft beer is $ 4 during happy hour. Much like the food at the Big Eat, it blew me away. You can tell they take time to craft items with care. The sauces are made in house, as is the kraut served with the sausages. I had the beer brat and a sausage marinated in red wine. Both had outstanding flavor profiles that were accentuated by the cucumber mustard. The fries are thick, topped with sea salt, and served with a house-made sauce. Its aioli like in texture and has a nice kick to it. Service is outstanding, FOH as well as back-of-house staff interacted with me and ensured I enjoyed my meal. This place is defintely worth checking out.
