Great cheese shop! Absolutely charming! Amazing grilled cheese sandwiches and the staff is so friendly. If you are in or passing through Chatham, Bimis is a place you must stop at.

Such an awesome cheese shop. Some amazing sandwiches. They are very friendly and willing to give you a taste of what ever cheese you would like. They are definitely going to be here for a while. I would definitely recommend stopping by. Their prices are very reasonable and their shop is super down to earth. Get the grueyer prosciutto on rye… You will NOT be disappointed! :) mmmm soooo good.

When I saw «cheese shop coming soon» in the window I couldn’t wait to tell my wife. And tell my wife I did — with the kind of excitement normally reserved for winning lotteries or finding Bono passed out by your compost bin.
I’d like to pretend I didn’t get excited about a cheese shop opening, but I did. I got really excited. I want to be cooler than that, but clearly I’m not.
And I’d like to pretend I didn’t make it a point to go there as soon as they opened, but I did. I was there within 24 hours. Because I wanted to see cheese.
They have lots of cheese. Excellent cheese. Cheese imported from great cheese-​making places. They put the cheese selection of the Price Chopper down the street to shame. Price Chopper thinks «imported» means «from Wisconsin.»
They had the cheeses that are most important to us and often hard to find, namely Brillat Savarin and Raclette. That’s right, my wife and I have strong feelings about cheese. And I can spell Brillat Savarin without having to look it up. It’s an important cheese. It’s cheeseportant.
They also had other hard-​to-​find things like quality olive oil. And they had salt flakes. Only a week earlier my wife was talking about needing salt flakes for a recipe. I had no idea where I was going to find such things. Lo and behold, these guys had them. It was a very exciting moment for me. You should have been there.
I love this store and will be there a lot. I’ll be the tall guy pouting if they’re out of Brillat Savarin.
