Why have I not reviewed Bill’s before?
Nice rich macchiato. Lovely deep smooth flavour with no bitterness.
Great, thick fluffy hot cakes complete with honeycomb butter, maple syrup and a generous serve of fresh banana. These wonderful pancakes are riddled with little surprise chunks of ricotta making these airy creations even more luscious.
Don’t miss these fluffy masterpieces.

Worth the wait! I went there twice and I highly recommend it as a «must go» for breakfast.
I have tried the hotcakes which are goods and really fluffy, toasts with avo and poached eggs, zucchini friters and the burger.
Everything was tasty ! The staff is super friendly and the place is lovely.

The food is amazing which I guess justifies the price and the wait, but I guess that depends on how patient you are.
I went here and had the corn fritters with avo salsa (an extra charge) and also added a side of miso mushrooms. It was very filling and I actually took half home. The mushrooms were a bit cold and nothing special (I’d hoped they be like mushrooms at Haven Tailoring Coffee Joyously which are great) but now I know.
My friend had the Ricotta hot cakes which were amazing.
We both had fresh squeezed OJ which was nice and she had a latte… then our bill was $ 75 for two at brunch. A bit much but tasty and we enjoyed sitting at the outdoor table. We waited about 30 minutes but it wasn’t terrible.
Of note, despite some all day breakfast items, breakfast ends at noon and since we had to wait 30 minutes, it was done by the time we we sat down. The best items seem to be all day though so not a huge concern.
No take away.

They don’t take brunch reservations so go early or be prepared for a wait — its worth it, though. Coffee is excellent and every dish looked amazing. The Fresh Aussie was 2 poached eggs, fresh kale, avocado, cherry tomatoes and gravlax — a delicious huge plate of fresh food & perfectly cooked eggs. The thick cut sourdough toast with a pat of butter was a great compliment. And the ricotta pancakes were as fabulous as everyone says.

WOW! We literally stumbled into this place and were extremely pleasantly surprised. I ordered the Spicy Sticky Pork Belly and the wife ordered the Poached Coconut Chicken Sandwich. Both were absolutely out of this world!
When the pork belly came to the table, I was informed that it was designed to be finger food and to wrap the pork belly in the lettuce cups… It was phenomenal! The pork belly was a good combination of spice and sweet and paired well with the cucumber slices and chopped peanuts.

In summary: —
— Rude and snobby staff (extremely poor customer service)
— an hour wait for food
— immensely overpriced for what gets served
— hot cakes quite nice but not with the attitude from staff that came with it

We ordered extra dishes cuz so many things liked so good. Great food, great staff, great atmosphere… a sunny experience on crappy, rainy day. Oh, and the best coffee in the city, in my opinion.

This has got to be the best breakfast place I have eaten at. The chefs were so professional. The smoothies were so unique. Wait staff were super professional too. Place is clean and well decorated. Line is too long!

You don’t need me to tell you that Bill’s in Surry Hills is a great café for breakfast, lunch or dinner. But I do need to tell you what a great café Bill’s for breakfast, lunch or dinner!
It has friendly attentive waitstaff who have teeth whiter than a Colgate commercial; outdoor tables to watch the hipsters, cool cats and locals shuffle on by; and delicious meals that offer a dining experience that is simply wonderful.

Go to Bills’ and you can’t go wrong. From the infamous ricotta hotcakes, sweet corn fritters, various egg dishes — huge portions, fresh, instagram worthy, and best of all, super tasty.
I’ve been to Bills several times for a period spanning 5+ years and it has been consistently good. The décor is fresh and modern.
Only downside is the queues and slow service as a result of the masses that Bills tends to. But at least you know you’re doing something right if crowds are queuing up for a couple of eggs!

I have never dined in restaurant specializing in modern Australian cuisine so it was quite new to me. I had the Parmesan schnitzel with creamed corn and fennel salad. Overall, I would say the meal was ok, there wasn’t really anything special about. It was a decent portion size as well.
It was quite a cozy restaurant with some outdoor seating and professional staff. They made sure we were enjoying our meal.
Had I read the other reviews earlier I would’ve definitely tried the ricotta hot cakes, which seems to be the specialty. Although it would be a bit weird having that as dinner.

The good: Two dishes: corn fritters and ricotta pancakes. Wow. Take your partner with you and share both of them for a half-​sweet, half-​savory, all-​satisfying brekkie! I find it incredibly unnecessary that they even have anything else on their menu.
The bad: If I had to be picky, the coffee didn’t live up to the quality of the food (my latte was incredibly weak). If I had to be even more picky, there was a long wait (20 minutes or so). But when there is food this good involved, 20 minutes is a small price to pay.
Bottom line: There’s nothing more fun than going to one of these over-​hyped restaurants and then trashing the experience afterward to show the world how uniquely discerning my taste in food is. Alas, Bills is actually quite amazing and well, well worth the 25 minute weekend wait!

I love Bills and we visit most times when we go to Sydney. They open early and it’s worthwhile forgoing the sleep in as it gets busy, especially on the weekends.
The coffee is fantastic, so much so, I had two! Bills is famous for their scrambled eggs and the ricotta hot cakes. I had the eggs and they are sinfully good! My husband had the ricotta hot cakes and they were amazing! So light and fluffy and served with honeycomb butter and maple syrup.
The staff are all very friendly and the décor is lovely too. The dinner and lunch menus also look fantastic so I shall be visiting again soon.

Great place in Surry Hills. After reading all of the rave reviews, we had to try the ricotta hot cakes. They are light and fluffy with creamy ricotta and a mild flavor. Definitely one of the best pancakes I’ve had for consistency but the honey and butter flavor is mild. We also tried the corn fritter which again had amazing consistency (not too crispy fried) and flavor but the amount of corn was a little overwhelming. They could have blended some of the corn so you didn’t feel like you were eating an entire ear of corn! The café is still nice, clean, modern and worth the stop. Must try their single origin coffee and fresh pressed juice!

Bills is fantastics. We waited for about 20 minutes (not long) on a Saturday morning for a table for four but it was worth it for the ricotta hot cakes I ate. Those things are fantastic. My partner was very pleased with his broken eggs. So much so that I didn’t get a bite of them. Our tablemates had the chia pudding and full Aussie and they seemed happy. I will say that this location has wonderful wait staff but the better ambiance is at Darlington.

I must have lucked out because I got an outdoor table without any wait time on a Saturday! I tried the corn fritters and loved it so much I even googled the recipe on the spot! Will try to make it at home one of these days :)
I had to dock one star because my coffee came after my breakfast even though I ordered the coffee the second I sat down. Not to mention I had to ask for silverware and it was crudely given to me by one of the wait staff (not even my server). I understand she is busy but busy is no excuse to poor customer service.

Was pretty crowded on a Monday during lunch hour. Decided to try this place out after several Unilocalers recommendations.
Tried out the ricotta pancakes and sunrise smoothie.
For the pancakes, it was fluffy and when combined with their honeycomb and butter it was pretty flavorful. The portion was pretty good and with sliced bananas, you will be filled fast. Something different from the pancakes you have tasted.
The sunrise smoothie wasn’t that great. More towards sour than sweet.
Servers were friendly and fast. Was able to dine in in less than 1 hour. Space was pretty narrow. I liked the open concept kitchen and the modern interior design. Price wise was on the expensive end. Overall, it was a good experience :)

I have always wanted to try the food at Bills ever since my friend made fish tacos using his cook book. She highly recommended his cook books for easy to follow recipes and which turned out successful dishes. So off I went and bought several of his cook books when Borders was still around.
So it was something on my bucket list that I MUST try the breakfast at Bills. To Sydneysiders, Bills may be an overpriced place or there are also other places with similar food quality as Bills but at a much lower price. But to visitors from places where such good quality fares is rare, then Bills is definitely a must visit place.
We went on a weekday morning and we were lucky to get a table as the place was packed around 10 am. The place was bright and welcoming and you could see it was like a neighborhood breakfast place.
Service was cheery though a bit on the slow side as there were only a few servers on duty for a full room. We ordered the ricotta hotcakes and corn fritters to share.
I would say the corn fritters trumped the ricotta hotcakes. The fritters were crispy and full of the natural sweetness of corn, plus it was not so oily it would leave your with a greasy aftertaste. The ricotta hotcakes were light but I could not really taste the honeycomb butter. They were good but not sublime.
It was a pricey breakfast as for 2 dishes and 2 cups of coffee, it came close to A$ 50.

I have dined at Bill’s for both brunch and dinner. Love the ambience, quite relaxed and the food is great.

Sis and I enjoyed our corn fritters and coffee Breakie here. We barely had a wait before being seated. The service was cheerful and good. Definitely made up for the horrific experience just a couple of days prior at FouratFive.
I will definitely return!
