I’d call this rustic Vietnamese. The food was nice enough and the service brisk and relatively friendly. But, nothing really stood out, and if I had a choice between this and most Victoria St places, I’d definitely choose the latter.

After visiting this place twice within the space of one week and ordering exactly the same Dishes with friends I can definitely say this place doesn’t skip a beat. If you are after an authentic and impressive Vietnamese experience Mandalay Bay deliver quality food and consistent/formidable service. An excellent choice for a great dining experience.

This place appears to have some good reviews, and mostly deserved. But for mine they put a bit too much msg in the food. I always find the heart beat picks up a couple of paces after eating here. It’s tasty, but probably not all that healthy. I normally go for the phở, it’s hands down the best of brunswick street. Pretty quiet most times of the day, and a little away from the main strip. No qualms in going back.

When Mandalay Bay came to Fitzroy, I was excited to have a Vietnamese restaurant that actually served phở! Phở is great for those cold winter days when all you want is soup to keep you warm. Although their phở is priced about $ 2 more than phở found in the CBD or Richmond, it’s worth it to have it conveniently located in Fitzroy. For $ 8.99, you can get a small bowl of phở. For a medium bowl, it’s $ 9.99. Their other dishes are also fantastic and reasonably priced. For entrees, try their quail($ 12.99) or spring rolls($ 7.99). Mains range from $ 8.99 to $ 17.49 for rice dishes with bbq pork to noodle dishes with seafood. If you’ve never had Vietnamese coffee, order a ca phe sua da or Vietnamese iced coffee with milk. Basically coffee with condensed milk, it is VERY sweet, but tasty. On the quieter end of Brunswick Street, you definitely won’t miss Mandalay Bay with its use of neon green and red and bright lights to get your attention. Luckily, the food keeps my attention.

I’m almost reluctant to write about Mandalay Bay because I’ve noticed it’s been getting a little busier lately and I’m concerned that the day will come when I can’t walk in and get a table straight away. But this Vietnamese restaurant deserves all the props in the world. I’d even go so far as to say it’s some of the best Vietnamese I’ve had, not just in Melbourne but anywhere. Of course, you wouldn’t pick that from seeing the décor, unless bright green, plastic furniture, revolving disco chandeliers and flat-screen TVs hung in the corners say«deliciously authentic cuisine» to you. You really can’t go wrong with your order — at least I’m yet to choose something I haven’t been completely happy with — but for a visual wow go for the crispy fried egg noodles with seafood. It’s like a giant bird’s nest filled with saucy seafood bites and veges. Even writing it makes me hungry.

Phở 54 Mandalay Bay has a lot going for it. For a start, I don’t know of another Phở shop in Fitzroy or up and down Brunswick Street. Secondly, if you though Seven Elevens were some of the brightest places on earth, then you haven’t seen Mandalay Bay. It has shiny chandeliers, lime green walls, a wacky water feature and red, orange and purple décor. Thirdly, the staff are attentive and friendly. One waiter is fairly old and he loves nothing better than having a bit of banter with his customers. Fourthly, there is the affordability of the place. The Phở soup is really cheap at 8 or 9 bucks and the other main dishes are affordable at around $ 15. And finally there is the food itself. The Phở is really good. Maybe not quite as good as Meekong in the city but right up there. The other dishes are delicious with the beef/chicken coleslaw being fresh and flavoursome and the salt and pepper squid being exceedingly moreish. In short, it is cheap and scrummy.
