UCO, headed by Irish Chef Ed Holloway is all about fresh, vibrant, back-​to-​roots cooking. We smoke our own trout, cure our own bacon, make our own ice-​creams, bake fresh bread daily… You name it, and we are probably doing it.

Our suppliers are key, organic milk is used to make our own greek style yoghurt for breakfast. Our local butcher makes Irish sausages to Ed’s secret recipe. Our fish and seafood change daily with what’s freshest in the market and we have a buyer supplying us with the freshest fruit and vegetables from Buenos Aires central market every morning.

Paired with a killer wine-​list curated by sommelier Andres Rosberg, an inspired dining space, and a top-​notch team in the kitchen, UCO is one of the city’s best gourmet local finds.

Fundado en 2014.

UCO opened it’s doors in December 2014. It has one of the most secluded gardens in Buenos Aires, right in the heart of Palermo Hollywood.

Fresh, tasty, vibrant, food is all prepared in-​house daily.

Responsable

Ed Holloway was trained in Michelin star restaurants in Switzerland and Spain before opening his own Restaurant, Butterfly, in Bariloche, Patagonia, Argentina. He is the owner and designer of the pastas in Farfalla, a boutique homemade pasta store in Buenos Aires and is currently managing his newest project, Restaurant UCO in Hotel Fierro, Palermo Hollywood, Buenos Aires.
